Christmas Casserole Cookies I

Cocoa Rum Balls

These are great! Easy to make and delicious. I rolled them in regular sugar instead of powdered sugar (as recommended by a few others)... they have a little crunch and it's a little less messy.

I mixed the whole lemon juice mixture with the whipped topping, as a few other reviewers had suggested. I also mixed in some finely grated fresh lemon zest in both the cake and the frosting. It turned out well but the cake wasn't quite lemon-y enough to stand up to the frosting.

Citrus Cheesecake

I made the recipe as directed, but I made the glaze with lemon curd (store bought) instead of orange marmalade. I tossed a pint and a half of fresh blueberries in the lemon curd glaze and then dumped it on top of the cake. Delicious and beautiful! I had two New Yorkers say that this cheesecake is the best they've ever had, which is a great compliment!

Cream of Broccoli Soup I

Peach Berry Cobbler

This is awesome! I added a little bit more fruit (1 c more peaches and 1 c more berries), and it was wonderful. The sugar on top gave it a nice crunch. I took it to a dinner party and we almost finished it between four people! I highly recommend it.
