Marinated Pork Roast

I had a 1.5 pound pork tenderloin and doubled the marinade that was called for and added about 7 peeled and chopped potatoes and a bag of baby carrots. I also sliced and poked the pork tenderloin so the marinade could seep through, and per another reviewer, I added minced garlic and lemon pepper to the slits in the pork and marinated for just over 1.5 hours. I cooked in the oven for at 300' for a 1/2 an hour and kicked up the temp to 350' for the other 1/2 and hour. Well, this was my attempt to slow roast the roast. The roast was just about finished about 15 minutes before the timer was set to go off, but the potatoes and carrots weren't done, what to do??? It was already 6 in the evening so I added a can of green beans to it placed some tin foil on the cast iron and threw it back in the oven at 425' for another 45 minutes, this turned out perfect, completely tender, full of flavor, both of my kids gobbled it up, and the hubs said I could make this anytime! Next time I will probably just put it in my slow cooker, and save myself sometime. Give this recipe a whirl, you won't regret it! Succulent, savory and superb! My chef hat off to you, Denise Hummel, for an keeper of a recipe!!!!!!

Nonie's Best BBQ

I made this recipe for New Years, I was worried I hadn't made enough the way people kept going back for seconds and thirds...truly a delicious sloppy joe! I tweaked the recipe per a couple other reviews, and sorta burnt the hamburger..DH likes it this way. I had mixed up all the ingredients in a bowl and after the hamburger was done cooking, I placed it all mixed together in the slow cooker on low for the first hour and keep warm after that! Twice as good the next day. (Update: I am making this for my family again tonight and serving it with rice and a veggie. I was actually craving this this morning!!) Thanks Samantha Kristina for an awesome recipe!!

Bachelor's Hash

I made this tonight and it does remind me a lot of shepherds pie. Because onions are an absolute no no in this house, (I love them, the hubby hates them), I have to substitute with onion powder. I added garlic powder, onion powder seasoning salt, black pepper and some parsley flakes to the dish. Also, I didn't layer it, I just mixed everything together in our big cast iron fry pan and stuck it in the oven for 40 minutes with the foil on it. I removed the foil and stuck it back in for an additional 40 minutes. It smelled so delicious cooking, a definite keeper. I just love this site for recipes!!!! Thank you, Kitten!

Pork Chops German Style

I used French's Smoky Mustard, and let them marinade for two days, because we changed our minds on dinner that night. I also used Cream of Chicken soup because it was what I had on hand. We had some last minute guests, so I chopped up the meat up before I cooked it. My husband who was stationed in Germany said that the meal had a Bavarian flavor, and the guests gobbled it up, and even asked for the recipe! Tonight with the leftovers I am making some rice and adding some sauteed mushrooms too it as well. I will definitely make again, hopefully keeping the pork chops whole this time.

Creamy Beef Casserole

This was a delicious recipe! My husband loved it and has already requested it again. I read the other reviews and and added worchestershire sauce and used ritz crackers as the topping. I also substituted onion powder for the onion, because onions are forbidden for use in this house, lol! I also seasoned the hamburger with garlic powder as well! I didn't have pimentos and omitted the corn, but will use it the next time I make it, definitely a keeper in this house!

Black Bottom Cupcakes I

I made these for my daughters snack day, we made these as miniature cupcakes, instead of the regular size ones. I thought they were really good, and they were a big hit at school. My husband liked them too, but he said he would like to try them as regular size, because a dollop of cream cheese wasn't quite enough on a mini cupcake. He also thought that you should cut down the vanilla to a 1/2 tsp, I didn't find the vanilla taste to overwhelming, so it is just a matter of taste. I will definitely make these again, as they disappeared as quickly as we made them. Side note: We got about 60 cupcakes doing it the mini way. It was also a Valentine's Day snack so I added little conversation hearts on top of the cupcake before sticking them in the oven. I also baked them for only 23 minutes at 350*, and that seemed to do the trick! Awesome dessert Laura, thanks for posting!

Peach Raspberry Cobbler

The cobbler is perfect even prepared in a metal pan. Had to use this because our Anchor Hocking glass pan, shattered in the oven, while we were melting the butter! The only suggestion that we would have is to add more fruit to the recipe. Will enjoy this again!

My husband and I loved this recipe! He ate it while he was stationed in Germany. The taste was awesome. The only alteration to the recipe was I salt and peppered the cubed pork before dredging it in the egg mixture. Will make this again!
