Roasted Garlic Lemon Broccoli

I love the concept of adding both garlic and lemon, it adds wonderful flavor to the broccoli. However, next time I am going to cook it for less time. The smaller florets came out burned and inedible. But with some small cooking tweaks, this makes a delicious veggie side dish!

Chicken Enchilada Soup III

This recipe isn't bad, but it isn't fantastic either. To be honest, it is like a less exciting version of tortilla soup. Although this soup has an interesting creative flavor, it is sort of a one-note taste and doesn't have much texture. I would like to try this again with some tweaks. For example, adding green chiles and topping it with some sour cream. I believe that with some changes, this could be a better recipe. But as it is, there isn't a whole lot going on with the flavor.

Corned Beef and Cabbage I

Very simple recipe, with great results! However, I do recommend a longer cooking time to get more tender meat. Also, I prefer the cabbage less crunchy, so I added it at the same time as the other vegetables.

Pumpkin Chocolate Chip Muffins

Delicious! This is a great, simple recipe. The muffins come out moist and fluffy. I changed the recipe by substituting applesauce for the oil, doubling the seasonings, increasing chocolate chips to 3/4 cup, and using brown sugar instead of white.

Butter Flaky Pie Crust

I don't like to cook with shortening, so I used this recipe for apple pie instead. It came out great! It is flaky and rich, and goes great with apple pie. Would definitely use this recipe again.

Grandma Ople's Apple Pie

This pie is absolutely delicious! What really makes it fabulous is the sauce that you make on the stove. However, one of my favorite things about apple pie is the cinnamon! So I added cinnamon to the mixture and it tasted great. I also used a crust recipe with butter, which went well with the pie since the sauce is made with butter as well. Would definitely use this recipe again!

Grandma's Chicken Noodle Soup

A pretty quick, simple, and tasty recipe. My husband and I both enjoyed it. Although I did not add the corn starch to thicken, as I personally prefer chicken soup broth to be thinner.

Chicken Tortilla Soup I

Very yummy! This makes a thick and wholesome soup. A big bowl of this is definitely enough for a full meal. However I would say this makes more like 4 large servings (not 8), if you plan on only having this for the meal. I find the easiest way to do the chicken is to just buy a full, fresh cooked chicken at the grocery store that you can quickly break down into shredded chicken. Also, I like adding pepperjack cheese instead to give a little extra kick.
