Scalloped Potatoes II

For all you people that made a roux, what's the point,do you all have dishwashers? This is how my Granny made her's for over 70 years, always creamy & loved by her over 500 descendants. It is a basic recipe that is part of our Irish background and Sundays at the farm the dishalways made it to the table. As to the layer method, Emeril Lagasse once used it on the show he had with a live audience. I remember, I thought it silly that a chef acted as if this was out of the ordinary. Also worth noting they DID NOT get the "Bamm' spice hit he was so famous for on that show. So save the roux for Welsh Rarebit, Creamed Salmon/Peas or just your basic White Sauce. Keep in mind some dishes are meant to be simple (bland), it's usually so to compliment a more flavorful main dish.

Hunnybunch's Special Apple Muffins

These muffins are a five for taste, but I'm glad I read the reviews first. The oven temp I used was 375 and 20 - 25 minutes for regular sized muffin tins. It was a very thick batter that needed to be tapped down in the tin before baking. A cup measure of apples would have been better as even Mac's can vary in size. Taking these minor things aside it's a recipe worth saving.

Strawberry Muffins

Followed the recipe exactly and found them bland and dry. I remade them with a few additions and they turned out much better. Here's what I did, first I added 1 tbsp fine lime zest, to the berries. Increased the sugar by 1/4 cup and oil and milk by 2 tbsp. each. Later I made a double batch and added 1 extra egg as well. So I think this was an ok base recipe.

Lazy Perogies

This is very similar to a recipe I use. I use the "Oven Ready" lasagne noodles and regular cottage cheese, thus skipping a step. For those that found them bland, try my version's addition of 1 tsp. of garlic powder and 1/2 tsp. celery salt to the cottage cheese mix, reducing the onion salt to 1/2 tsp. in this step. Of course serving with sour cream always helps.

Sausage, Peppers, Onions, and Potato Bake

I have made this twice,once as written & my own variation. In a half batch of the recipe I added asparagus, hot Italian sausage that I browned and then cut, and I mixed 2 tbsp. barbeque sauce with the stock. I also used 1 small yellow & 1 red onion. Very tasty and adaptable recipe, I'm looking forward to subbing carrots & parsnips for the potatoes next time. It has has become one of my husband's new favorites. Thanks for a wonderful recipe!

Slow-Cooker Cranberry-Orange Pork Roast

This is a great recipe for the Sundäy dinner on days when you have other things to do. I add an extra 1 tbsp. frozen orange concentrate to the sauce. It was a real hit when served at a pre-Christmas dinner party with egg noodles, spinach salad & fruit crisp.

Bacon, Lettuce, and Tomato Macaroni Salad

Very good recipe, although mistitled. I followed suggestions about adding bacon at the last minute and it stayed crispy. My tasters didn't find it really tangy so next time I'll up the vinegar by a couple of tablespoons, and will make it with 1/2 cup chopped red pepper added as well for extra crunch. It is a keeper that can be adapted easily for personal tastes.

This was good when I made it as written. The second time I doubled it and added 1 cup water and !/2 a vanilla bean, sliced and seeded. That put it over the top!

Oma's Rhubarb Cake

I made it as is and was happy with the taste, and the cake was gobbled up. I now use 2/3 cup sour cream & 1/3 cup apple sauce, to reduce fat. I've also made the cake with rhubarb & strawberries, with apple, and with blueberries. Four cups of fruit seems to be perfect when using fresh fruit. Very tummy and easy enough for my 10 yr. old granddaughter to make.

Peanut Butter Cornflake Crunch Bars

This recipe has been around for at least 40 years. My Mom made these for our lunches when I was a teenager and I made them for my kids. YES reduce cereal to 8 cups and you can use any combo of dry plain cereal. I have subbed with "O's" Rice Crispies etc. as part of the mix for the 8 cups. You can also use honey as a switch from corn syrup. Enjoyed this variation a .

Maritime Blueberry Buckle

As close to my Grandma's as I have been able to find. Very easy and I use a spring-form pan for easy serving. I've made it with both blueberries and strawberries, excellent warm with cream or cold for breakfast.

Strawberry Coffee Cake

I followed the recipe the first time so the review would be fair.It was very sweet and tasty when you eat a fork with topping, berries and cake all at once. The only change I made was to the nuts, I used slivered almonds because that's what I had on hand. It didn't take any more prep time than stated, if you are an organized baker. This will be a standard for me and next time I'll try rhubarb for the fruit.

Saucy Apple Pork Chops

Good, not great...I'll try again with 1/2 cup less applesauce as it became very watery.I will also omit the sugar as I agree with others that it's not needed. Company ate it & no one commented or asked for the recipe. That to me is very telling if people ask for it, the recipe should get 5 stars, if not it loses one. If it needs modification it also loses a star.

Peanut Beef Stir-Fry

Not bad, a hint of Thai flavor that could be enhanced with the addition of a few drops of lime juice. I served it over rice noodles and added some bean sprouts for a cool crunch and the family liked it. I'll definitely make this again reducing the cornstarch by 1 teaspoon.A very good standby for when the cupboard's almost bare.

Traditional Salisbury Steak

Not bad, I took the advice of others & added some sweetener to the sauce, as well as a dash of steak sauce to the meat. Big tip here, put the patties in the fridge before cooking them, !/2 hr. will do. I do this while slicing the onions & preparing the sides. This improves the flavor and texture of the burgers. A recipe I'll play with some more.

Potato Chips

Used a mandolin on the thinnest setting, I could see through the slices. They still turned out to need closer to 10 min. cooking time & still never got truly crisp. I'll stick to deep frying mine thanks!!
