Chocolate Eclair Dessert

Yum! Surprisingly easy to make and sooo delicious. The chocolate sauce recommended is awesome and pretty easy to make - I agree that frosting would not be nearly as good. Thanks for sharing this awesome little recipe.

Ronaldo's Beef Carnitas

Tender and delicious shredded beef tacos. These were absolutely wonderful. Modified the recipe a little, mostly as recommended by other reviewers: Used tri-tip roast (2lb size was plenty for two people) but kept spices same volume as indicated in this recipe (since others recommended doubling spices for original recipe at 4lbs). Cooked in crock pot on high for 7 hours. Prepared by seasoning roast with spices as a rub, then placed in crock pot in a broth of: green chiles (used half hot and half mild), 2 diced garlic cloves, 4oz jalapeno tomato sauce, one can of beef broth, and 2 chopped jalapeno peppers. Did not wrap in foil but the meat eventually cooked tender in broth. Finally shredded the beef and placed in soft taco shells with guac, sour cream, and fine shredded cheese. SO TENDER and came out just slightly spicy...the best beef tacos we've ever made at home. Thanks for sharing this recipe!

Swedish Meatballs II

These were delicious on their own - no changes were made to the recipe and they turned out great. Very savory meatballs and great sauce. We served with red-skin potatoes. Easy to make and tasted better than we expected. Thanks for sharing the recipe!

Roast Pork with Maple and Mustard Glaze

This pork loin was great. My husband loved it and kept saying so during dinner. I seared the loin after seasoning it (per another reader's recommendation): generously pepper/salt, and a little garli powder and onion salt. Then I put the loin and glaze ingredients in the slow-cooker for a couple hours til temp was 170. Basted frequently. Loin was moist and flavorful... very easy to prepare! Served with yams and green beans. Thanks for sharing this recipe and for other readers recommendations that I used.

Butternut Squash Soup

This was a wonderful soup! We used only three ounces of cream cheese otherwise it would have been just too rich. Awesome flavor and aroma. Added a little more cayenne pepper for a little more kick, but the recipe is awesome on its own - it tastes amazing without any doctoring. Thanks to the cook who shared this new favorite recipe!
