Heavenly Halibut

We really liked this recipe. The changes that we made were to omit the mayonnaise (not sure what that would add, except to make the butter mixture a little thinner) and we used chives instead of green onions, and we cooked the halibut on the grill. The substitutions were purely out of convenience as we happened to be out of both mayo and green onions, and I already had the grill heated up prior to finding this recipe. =) We put a small amount of the butter mixture on the fish while it cooked on the grill (about 10-12 minutes @ 400-500 degrees - but pulled it off before it was completely cooked) and then put the rest of the mixture on the fix and put it under the broiler. Served it with grilled asparagus and a Spanish white wine, not too dry, and it was fantastic!

Malaysian Mango Chicken Curry

This is a fantastic start to a recipe. I made a couple of changes based on what I had on-hand in my spice cupboard and what was in my fridge. Here's what I did: I followed Meg's (May 4) version and doubled the sauce. Instead of adding a second cup of chicken broth, I added 1 cup of coconut milk. I also used curry paste (probably more than what the recipe calls for) and I added about 1/3 cup of coconut milk to the rice so that we had coconut rice (thanks Dutch for the idea!). The result is slightly more naughty than the original, but it was really tasty! My husband and son raved about it and I was very happy with the results.

Tom's Blackened Seasoning

We used halibut with this recipe and cooked it on a really hot cast iron griddle. The result was fantastic. I had cut the fist into strips and we put them into fish tacos when it was all done. Yum!

Lobster Bisque

This recipe is outstanding! After the first bite we started giggling because it was *so good* that we couldn't believe that it came out of our kitchen! I served it with fresh bread and a salad, and it was absolutely perfect. Like others, I doctored the recipe a little. I used more butter & flour (4 Tb of each), and I added two healthy sprinkles of cayenne pepper, and two shakes of Northwoods seasoning (similar to Old Bay). We both thought that the cayenne was integral to the recipe... but couldn't have identified it if we hadn't known what was in there. It just gave the soup a depth that would have been missing otherwise.
