Apple Stuffed Chicken Breast

This is a great recipe! My husband and I love it! The only change I'm going to make next time is, instead of pounding and rolling up the chicken breast, I'm going to butterfly them and stuff them. The apple chunks made it difficult to roll and I had to use way too many toothpicks to keep them together. But, paired with a sweet potato or a corn casserole, this is a perfect, healthy fall dish! It's a good base recipe, too. Feel free to season it however you wish!

Old Fashioned Paradise Pumpkin Pie

Be warned - this pie is dangerous! Once you start eating it, you can't stop! Everyone is already requesting I make it again next year. I am glad I followed everyone's suggestions to chill the cheese layer and double the streusel layer, because that is exactly what I did. Other than that, the only change I made was using pumpkin pie spice instead of just nutmeg.

Grandmother's Famous Cranberry Bread

Oh. My. Goodness. I just told my mother that I think this is the best bread I have ever baked! The flavors of the orange and cranberry blend really well. I was scared when I was mixing it together because the only seasoning you add is the orange peel. It really does not need any other flavoring! The orange juice and the peel give it plenty. Very yummy - moist on the inside and crunchy on the outside!

Sweet and Nutty Moroccan Couscous

This was very good! I used salted butter and left out the cinnamon and almonds. I didn't have unsalted butter nor almonds. Also, I served it with a moroccan tagine sauce which I added cinnamon to, so I didn't want it to be cinnamon overkill. The apricots are really good in this, especially with a sauce and the raisins. Do not leaved either of these out!

Moroccan Tagine

This is soooo good! Very flavorful and aromatic. My mother, who is very particular and not usually willing to try new foods loved it. I added about half a teaspoon of cinnamon and curry and a teaspoon of cumin. Also, I didn't have vegetable broth, so I used chicken broth instead. I love the fact that you don't have to add extra salt. The spices really give it such a good flavor, so no extra salt is needed!

Quick and Easy Shrimp Fajitas

This was very yummy! I made it for a get-together with some friends and they ate every last bit! I live overseas where I can't run to Wal-Mart and buy taco seasoning, but I do have quite a bit of Tony Chachere's cajun seasoning that I brought with me. I think I might try it with that next time instead of th taco seasoning!

Christmas Banana Bread

I just made this for the first time last night and it won't be the last! It is a very moist banana bread with that little holiday cheer that makes it yummy. I did add 1 tsp. of allspice, 1 tsp. of cinnamon, and 1 tsp. of vanilla. That made it all the more festive! Also, I love cherries, so I doubled the amount. The chocolate, the cherries, and the spices made it taste like Christmas.

Mocha Chocolate Chip Banana Muffins

These are very yummy! And they're even better with a steaming cup of coffee! I didn't have margarine on hand, so I used 1/4 cup of oil and 1 cup of applesauce. Also, all I had are the small, sweet African bananas, so I used 6 of them. I would like to note that you should only use muffin liners with these. They stick to the pan pretty badly. The first time I made them I was not able to get them out, but paper muffin liners help with that problem. My friends all love them when we have brunch. Quite yummy for any and every coffee lover!

Chocolate Chip Muffins

This is a great recipe! I followed others suggestions and changed it to 1 cup milk, 1/2 cup oil, and added 1 tsp. vanilla. I love the sugar top, which gives it a cookie feel. I think it would be good without the sugar topping, if you're wanting to cut down on the sugar content.

Amish White Bread

I have found my bread recipe!!! I live in a small town in Africa and it is impossible to find sliced white bread here. I am so excited to find this recipe and the loaves turned out absolutely beautiful! It slices nicely and you can get thicker slices than store-bought.
