Super-Easy Rocky Road Fudge

Very good recipe. The title says it all. I thought it was going to taste more like the harder version of rocky road (like See's Candy) but it has the consistency of smooth fudge with marshmallows in it. I think next time I will try making this recipe with dark chocolate.

After-Thanksgiving Turkey Soup

OMG! It ought to be called "Death By Turkey Soup"; it's so rich, creamy & full of flavor! This is the first time I've made homemade turkey soup. I made this last night out of the turkey carcass from our Thanksgiving turkey. I'm going to share it with some friends because I could eat this everyday until it's gone. Total comfort food - right here. I added some chopped zucchini (just to give it some color contrast) and basmati rice. I'm adding it to my recipe box - it's a keeper.

Beef Potato House Pie Casserole

This was good. I didn't layer it. I just put the mixture in the pan and then smothered it with the mashed potatoes and topped with cheese. I also threw in some mushrooms and red bell pepper (didn't have a green one). Came out pretty good. Me and my roommate loved it.

Italian Lamb Stew

I took advice from some of the other "posters" and added in whatever vege's I had here. Bad idea! Turnips and parsnips were lousy in it. Stick with the basic stewing vege's and you'll probably be o.k.

Polenta with Rosemary and Parmesan

Based on other posts here I omitted the rosemary. Instead, I used 1/2 tsp of Italian Seaoning. Wonderful flavor, easy recipe. I'll make it again.

Baked Fried Eggplant

As others have stated here it is extremely messy to make; the flavor is very bland and the consistancy of the eggplant is like it is barely cooked. And (as others have stated) I won't be making this one again. Frying or grilling are much better recommendations for eggplant.

Buttermilk Pound Cake II

This pound cake recipe was great. Very simple and easy. I added a tsp of almond extract and 1/2 tsp baking powder like others posted here and it came out dense, moist and delicious. Has a bit of a crunchy exterior, which I liked. The batter fit into 2 loaf pans. I was able to freeze one and my husband ate the other.

Shredded Beef Enchiladas

Best Peanut Butter Cookies Ever

The trick to these cookies is to wait for them to cool before removing them from the cookie sheet, or else they'll just fall apart. These cookies were nice and soft, and very tasty.

Whole Wheat Blueberry Pancakes

These were pretty good. I added vanilla and cinnamon like a few other posts recommended. I also used the Blue Agave and Egg Beaters like others mentioned. My husband liked them, too - which is saying alot since he likes fat, sugar and salt in everything.

Dijon Garlic Salmon

I don't like fish, but I know that I have to eat it sometimes just for the health benefits. This was a great recipe. I used spicy brown mustard since I didn't have any dijon and both my husband and I enjoyed it. I'll be making it again.

Taco Seasoning I

I added cayenne pepper instead of the crushed red pepper flakes. This is a really good taco seasoning for ground beef AND chicken. Since I already had all the ingredients so I saved money by not buying that packaged stuff. Besides this really is just as good, if not, better.

Chocolate Coffee Molasses Cookies

Really didn't care for this recipe. As with another poster it did take quite a while to bake these and they weren't all that great. The texture was dense and lacking flavor (maybe that's why the icing is included). The cookie isn't completely cooked after 10 mins, so I had to adjust the time to 18 mins. Plus, I added almost 8 cups of flour before the dough was sticky enough to roll into a ball. Also, the longer these cookies sit around the harder they get. Not a recipe I would make again.

Raspberry and Almond Shortbread Thumbprints

Cookie is very buttery. My batch yielded 26 cookies. I used a sugarless jam (with Splenda) on my first cookie sheet, then I used a homemade jam on my 2nd sheet and a regular store bought jam on my final sheet. The sugarless jam held together well, however the homemade & store bought jams drastically spread out. However they are a tasty cookie.
