New mother to a beautiful, energetic little boy. He just turned a year old in Sept. I'm having to adjust to motherhood. My life is turned upside down (in a good way) and I'm trying to find balance. Learning healthy things to fix that are quick and easy for both my son and I. Finding things to fix and eat "on the run" are ideal for us. I need to loose 60 lbs. (YIKES!) so eating healthy and exercising are a MUST.
My favorite things to cook
I'm a HUGE fan of the slow cooker, I LOVE it!!! Stews and roasts are a favorite in the winter along w/ chili. I enjoy casseroles and Mexican food as well. Since I'm having to eat healthier I'm going to have to find new favorites, but man, I love my Mexican food!!! I also love to bake goodies @ Christmas time.
My favorite family cooking traditions
It's all new for me right now. I'm developing traditions as we speak.
Chili, stews, roasts and casseroles in the winter. Baked breads and cookies around the holidays. Lots of salmon and shrimp dishes in the summer along w/ salads and fruit. Ceviche ALWAYS!
My cooking triumphs
Baking perfect the zucchini and lemon bread. I make Awesome chili and stews in the slow cooker. I entertain the thought of entering a chili cook off. One of these days. And I make awesome, "easy chicken enchiladas" and beef tacos.
My cooking tragedies
Several Italian dishes. Good thing I'm not that into Italian food. It also took awhile to perfect my lemon bread. I'm not very good at frying food and my waist line thanks me!I usually get splashed w/ oil, use to much, etc. It ends up being a very painful experience!
