Taco Salad I

Very tasty! I did not use the dressing...didn't need it. However, I did cut up a lime and squeezed the fresh juice onto the salad. Wonderful! Easy! My husband said MAKE IT AGAIN! :)

Lentil Soup

Excellent! I made this recipe tonight and WOW it is terrific. Of course, I did do a couple of tweaks of my own. I used the best canned tomatoes in the world...one 28 oz can of San Marzano brand whole tomatoes (chopped them up in the can and poured the whole thing into the pot) AND instead of the water the recipe calls for, I replaced it with Swanson's organic chicken broth (reduced sodium). I served it with warm French bread with an extra crispy thick crust and butter (yes, butter). Deeeee-lish!

Triple Berry Crisp

Excellent! I used Splenda in place of the sugar and cut the butter back a little. I served it with a healthy "dollup" of plain Greek yogurt. This would be wonderful with a little glaze or icing on top, too.

Best Chocolate Chip Cookies

Absolutely, positively wouldn't change a thing! These divine morsels of chocolate chip cookie heaven are outstanding. Every single time I bake up a batch of these babies, I get rave reviews.

Strawnana Bread

This turned out really great and it was quick to prepare! I added toasted slivered almonds to the top of the batter prior to popping it into the oven and it tasted wonderful. Very moist. A great way to use up strawberries (now that they're in season here in Southern California) and bananas (on their way out). I made 1/2 the recipe and added 1 teaspoon of real vanilla extract. A real winner. Maybe next time I'll add chocolate chips.

Zucchini Frittata

Very good! We used Kirkland brand shredded cheddar and monterey cheese blend cheese and it tasted delicious. My BF wanted his portion in a flour tortilla. He was very pleased. It couldn't be an easier recipe to follow.
