Angela's Awesome Enchiladas

First time making enchiladas, and the fam gobbled 'em right up! I cooked the chicken, taco seasoning and some water in a crock pot from nearly 3 hours, shredded it, then returned it to the crock, added the cream of chicken, squeezed the whole lime into the mix, then assembled the enchiladas without having any sauce on the bottom of the dish. I poured some enchilada sauce pver it, but saved about half the can to be poured on individually. I also topped with a TON of cheese. The fam wants this added to the regular rotation. :-)

Sweet Green Bean Bundles

One of my faves! I cooked the bacon a bit so it would be crispier. My mother-in-law didn't like it the first time I cooked it because she said the bacon was raw, despite me cooking it waaay longer than the recipe suggested, which made the green beans wither. So when I cooked the bacon before-hand for about 5 minutes, it came out better. Plus, I used olive oil instead of butter. YUM!

Awesome Slow Cooker Pot Roast

I've made this at least a half dozen times, and a little different each time and it always comes out great. First time, I followed recipe except I used beef broth. Other times, I've used chicken broth and added minced garlic and onions. I've also added various veggies since it makes a lot of an awesome gravy. Plus, I always sear it first with pepper and salt, like others siggest.

Hot Artichoke Spinach Dip

THE BEST EVER! I blended the sour cream, parm (no romano), garlic, cream (used milk other times), and the artichokes in a blender; I eyeball the milk/cream to make it blend a bit easier, but it still comes out much thicker than restaurant style. I squeeze out the water from the spinach by wrapping it in a paper towel. This recipe makes a lot, but does not last long in my household!

Mexican Mole Sauce

This recipe probably would have been milder but just as good as the tweaked one I made. And lemme say, it was AWESOME! I doubled the onion, the cocoa, and cumin, used 6 cloves minced garlic, and tomato sauce instead of soup. Oh and I used a can of diced tomatoes with green Chiles already in it. I spread half the sauce on the bottom of a baking dish, put 12 skinless boned chicken thighs on top, sprinkled salt and pepper on top and saved the other half of the sauce to spoon on the chicken individually. Oh yeah, I cooked it at 400 degrees until the temp was right on the thermometer...about 40-45 minutes. PERFECT!!!

French Beef Stew

Mad it exactly how it said except skipped the mustard because when I tasted it at the end, I couldn't imagine risking ruining it with mustard. SO satisfied!! My hubby absolutely loved it!

Snowballs II

I made these for my daughter's classmates and teachers for Christmas, and got rave reviews! I added crushed peppermint to the dough and rolled it in pure peppermint candy after rolling it in a powdered sugar/peppermint mixture. I'm in LOVE with these because they're buttery AND minty! Two of my favorite flaves!

Rosemary Roasted Pork Tenderloin

Great flavor and super simple! I used unsweetened apple sauce instead of the juice, about a lil less than a tbsp of rosemary (it can overpower dishes easily, in my opinion) and about 2 tbsp of dijon. Perfect!

French Dip Sandwiches

My 5 year old said, "this is the BEST meat EVER! You have to cook it this way ALL the time." :-) So, it's a hit in the Newcomb household! I made some small adjustments like I used chicken broth instead of beef bouillon and eyeballed it, about 16 oz. of water, and some onion. Everything else was the same. Thanks for this amazing and simple recipe!

Sandy's Chocolate Cake

FIRST time baking a cake from scratch! What an enjoyable experience, from bowl to mouth. I'm tempted to never make a chocolate cake from any other recipe but this one. The fam LOVED it! It was very rich, just the way we like it! ;-)

Whipped Cream

The first time, I overbeat it by accident. The second time, it came out perfectly because I just put all the ingredients in at once, so I was able to jjust beat it once. Deeeelicious! I used it on a chocolate cream pie and a sweet potato pie.

Pasta e Olio

The BEST pasta ever! It's not often that I make a recipe exactly as it's written and have it come out fabulous. This is a rare gem. Great with steak or chicken parm. Even my 5 yr old loved it and didn't even notice the slight kick the red pepper flakes gave it!

Simple and SO tasty. My 5 yr old loves the idea of calling the bowtie bats, but she calls the cheese bat poo. LOL Not appetizing, but cute. :-) Happy Halloween!

Halloween Bloody Baked Rats

My daughter LOVED telling Grandma that we'd be having "Bloody Rats" for dinner! I didn't do the cheese thing. I added the worcestershire sauce and some soy sauce and garlic powder to the meat. I shaped 7 rats, put them on a drip pan (not sure if that's what it's called) so that the fat would drip away from the meat. I baked it like this for 25 minutes. Then I put them in a baking dish with a large can of pasta sauce poured over and around the rats and baked them for 10 minutes, turned off the heat while I finished the rest of my dinner. It was perfect!!! And Grandma said, "I love these rats! We should have them more often!". My daughter got a kick out of this! I paired this all with witches fingers (biscuits shaped into fingers with almond slivers as nails), boiled brains (a whole cauliflower, cut in half and boiled for 10 minutes and drizzled with watered down ketchup when served), eyeballs (deviled eggs with an olive for the iris), worms (spaghetti pre-chopped into small pieces) and "Kitty Litter Cake" from this site. Dinner was horrific! lol

Garlic Prime Rib

Everyone kept saying it was the best prime rib they ever had! And I agree! I made two 5 pound roasts and timed the cooking as a 5 lb cut. I used fresh thyme. As others suggested, I did 12 min at 460, 8 at 400, and 1 hr and 40 min at 325. Came out perfect at 125 degrees. I can't get over how good this was!
