Chef John's Caramel Apple Pie

Great flavor, but more of a cobbler consistency (excess liquid). This needs a binder. I did use the lattice top, so there was plenty of time for excess moisture to escape, but still too runny. I think next time I will add just a little cornstarch to the sauce.

This is a great recipe, but should steep a bit longer at room temperature (I suggest overnight) before mixing in the milk. FYI: Great with rum!

Fresh Semolina and Egg Pasta

Grilled Radishes

I didn't even know you could cook a radish, but after planting my vegetable garden, and being overrun with radishes, I started looking for ways to enjoy them. This recipe is a winner. I makes a great little side dish. I boosted the garlic a tad, but my husband and I like more garlic in most things. I'll be making this again for sure. I still have a ton of radishes to harvest!

Banana Cream Pie I

This was a good start, but that is not the same thing as a good recipe. This websites greatest asset is the community of bakers and cooks who can turn just about any recipe into a winner. However, this same community tends to rate its final result rather than the recipe as written. Because of the suggestions of many I was able to make a five-star pie. I used raw sugar instead of white, the slight molasses flavor of raw sugar is perfect with bananas. I changed the flour for cornstarch (3 Tbl). I used the whole egg, after all the nutrients are mostly in the white. I increased the vanilla to a Tablespoon. After step 1, I allowed the mixture to rest for 10-minutes before tempering the eggs. After adding the eggs I brought the mixture back up to simmer before timing the final 2-minutes of cooking. I did NOT bake the pie after assembly. I placed wax paper on the assembled pie to keep a skin from forming. Served with whipped cream (this one's not a recipe change, just a preference). Sorry, but that's too many changes to call this recipe as written 5-star. Btw the Graham Cracker Crust recipe on this website was perfect for the pie as altered above.

Chocolate Cornstarch Pudding

Quick and Easy Oatmeal Muffins

This is a good basic recipe, but it needs a lot of tweaking to make it anything special. There is no flavorings in this recipe so it does make a fairly sweet, but bland muffin.

Grandad's Pancakes

These pancakes have a good flavor. They are a bit sweet, but I liked them just the same. I guess Grandad and I both have a sweet tooth. However, Grandad likes his pancakes awfully thin. These are on the verge of being crepes. I'll try a 1/4 to 1/2 cup more flour next time.

Marvelous Minestrone

Not a bad quick meal. Very easy to prepare. Use fire roasted diced tomatoes for extra flavor. Serve with fresh bread and a glass of wine and you have a real winner!

Easy Vodka Sauce

The sauce as written is okay. It's a good base but needs a little help to be truly awesome. Here's what I did (when making half the recipe): I used Olive Oil instead of butter and added 4 cloves of minced garlic along with the onion. When adding the tomatoes (I used pureed instead of crushed). I also added 1 Tbsp each of fresh basil and parsley, 1/2 tsp dried oregano, 1/2 tsp salt and 1/2 tsp pepper. After adding the cream I left the lid off the pot to help thicken the sauce. My Italian foodie neighbor loved the sauce and his wife asked for the recipe. I will make my rendition again and again! Thanks for a great starter Married!

Pumpkin Soup

This is an easy to make, flavorful, soup. If you'd like to make it ahead simple stop after pureeing the soup and store. When ready to serve reheat the soup, add the cream, and wha-la!

Bob's Pineapple Pie

This is a good start, but I prefer a creamer custard pineapple pie. I substituted the cup of reserved pineapple juice with a cup of heavy whipping cream, and only used 1/2 cup sugar. Otherwise I followed the directions. The heavy cream made all the difference.

Alfredo Sauce

This was a good start. I knew from reading the recipe that it didn't have enough garlic for my family so I chose to use 3-cloves. That's a personal preference so I did not ding the recipe for that. However, even using the heavy cream the sauce did come out very thin. I mixed a little (1 heaping teaspoon) of corn starch to a little water and added it the sauce. It only took a minute or so at a slow simmer for the sauce to thicken right up. I also added a teaspoon of black pepper (again personal preference). Since you can not allow a cream sauce to boil, I also think it best to add the garlic when melting the butter and allow it to sauté for 2 or 3 minutes.

Creamy Au Gratin Potatoes

I've made this recipe a couple of times now. It's quick and tasty. However, I do suggest a couple of alterations. Like other reviewers I'm not keen on the texture of onion rings in my gratin, but don't omit them. They add a nice flavor to the finished dish. Instead, dice then and sautée with the butter when making the cream sauce. Also, I slice my potatoes a lot thinner then 1/4". It helps the dish cook quicker. Mine was done in under an hour. I layer my potatoes with the sauce to make sure the sauce is evenly distributed throuout the dish. Finally, I add a bit more cheese then called for and reserve a little for sprinkling on top. As CathyM says, you can use a variety of cheeses. Try it with gruyere. It' amazing! Thanks Cathy!
