Grandad's Pancakes

These pancakes have a good flavor. They are a bit sweet, but I liked them just the same. I guess Grandad and I both have a sweet tooth. However, Grandad likes his pancakes awfully thin. These are on the verge of being crepes. I'll try a 1/4 to 1/2 cup more flour next time.

Marvelous Minestrone

Not a bad quick meal. Very easy to prepare. Use fire roasted diced tomatoes for extra flavor. Serve with fresh bread and a glass of wine and you have a real winner!

Easy Vodka Sauce

The sauce as written is okay. It's a good base but needs a little help to be truly awesome. Here's what I did (when making half the recipe): I used Olive Oil instead of butter and added 4 cloves of minced garlic along with the onion. When adding the tomatoes (I used pureed instead of crushed). I also added 1 Tbsp each of fresh basil and parsley, 1/2 tsp dried oregano, 1/2 tsp salt and 1/2 tsp pepper. After adding the cream I left the lid off the pot to help thicken the sauce. My Italian foodie neighbor loved the sauce and his wife asked for the recipe. I will make my rendition again and again! Mexican Style Cornbread

Nice moist cornbread. Just the way my hubby likes it! I can not buy buttermilk in Ecuador so I used plain yogurt and it came out fine.

French Silk Chocolate Pie II

Very good as written, but I do prefer a richer chocolate taste so I doubled the cocoa to 1/2 cup. (4 Tbs = 1/4 Cup)

Pumpkin Soup

This is an easy to make, flavorful, soup. If you'd like to make it ahead simple stop after pureeing the soup and store. When ready to serve reheat the soup, add the cream, and wha-la!

Bob's Pineapple Pie

This is a good start, but I prefer a creamer custard pineapple pie. I substituted the cup of reserved pineapple juice with a cup of heavy whipping cream, and only used 1/2 cup sugar. Otherwise I followed the directions. The heavy cream made all the difference.

Alfredo Sauce

This was a good start. I knew from reading the recipe that it didn't have enough garlic for my family so I chose to use 3-cloves. That's a personal preference so I did not ding the recipe for that. However, even using the heavy cream the sauce did come out very thin. I mixed a little (1 heaping teaspoon) of corn starch to a little water and added it the sauce. It only took a minute or so at a slow simmer for the sauce to thicken right up. I also added a teaspoon of black pepper (again personal preference). Since you can not allow a cream sauce to boil, I also think it best to add the garlic when melting the butter and allow it to sauté for 2 or 3 minutes.

Creamy Au Gratin Potatoes

I've made this recipe a couple of times now. It's quick and tasty. However, I do suggest a couple of alterations. Like other reviewers I'm not keen on the texture of onion rings in my gratin, but don't omit them. They add a nice flavor to the finished dish. Instead, dice then and sautée with the butter when making the cream sauce. Also, I slice my potatoes a lot thinner then 1/4". It helps the dish cook quicker. Mine was done in under an hour. I layer my potatoes with the sauce to make sure the sauce is evenly distributed throuout the dish. Finally, I add a bit more cheese then called for and reserve a little for sprinkling on top. As CathyM says, you can use a variety of cheeses. Try it with gruyere. It' amazing! Thanks Cathy!

Cinnamon Carrot Bread

The dough for this bread came out way to thick and was bland. I added an additional teaspoon of cinnamon, plus a teaspoon each of nutmeg and ginger. I also added 1/4-1/3 of milk to bring the batter to a traditional consistency for a quick bread. It baked up well and made a good carrot loaf with those changes.

To make a great pesto you need to toast the pine nuts. Since the instructions never mention that I only rated this a 3. Toast the pine nuts and you have a real winner!

Pineapple Pie III

We have a small local bakery that makes the world best Pineapple Pie. I've been trying to duplicate it at home, because they don't bake it as often as I'd like. This was not a bad pie, but I will keep searching for that perfect recipe. This just did not have the rich pineapple flavor I was hoping for.

Raspberry Pie III

Delicious! The only change I made was substituting corn starch for the tapioca. Some people have problems using corn starch in place of tapioca in fruit pies. I would recommend mixing all the dry ingredients together thoroughly. Mixing the liquids with the berries and tossing. Then combining the two making sure to thoroughly blend all the ingredients. Hot Water Pie Crust II

I'm a pie crust snob so I was hesitant to make this crust, but I was in a hurry and didn't have time to make my usual "Art of French Cooking" pie crust. I was swayed by the glowing reviews. I am not at all disappointed. I followed the recipe to a "t", but did not roll the dough between waxed paper. I rolled it on a well floured counter. This crust is easy to make, easy to rollout, and the results are a light flakey crust. What more could you possibly ask for! I still prefer the buttery flavor of a butter crust, but one reviewer said she made it with butter and it worked fine. If it does I just may say goodbye to Julia! Thanks for a GREAT recipe!

Garlic Mashed Potatoes Secret Recipe

Every time I made garlic mashed potatoes in the past I was disappointed. I read all the reviews about how to mellow the garlic flavor and decided I would probably end up with another disappointment, so I chose to follow the recipe to a "T". My only alteration was cutting the recipe to make only 10 servings. I was rewarded with rich and flavorful potatoes. The oregano was a perfect companion to the Romano Cheese. My dinner guests thought so too! This is a keeper. Thank you Austad, whoever you are!

Watercress Soup

Great way to enjoy watercress. The only alteration I made was to not whip the cream but rather just add an attractive swirl of cream to the center of the soup. Very tasty! Thanks for sharing!
