Merritt's Butternut Squash Gratin

We loved this recipe. I cut out the herbs all together because I wanted to really taste the squash and cheese. I also used swiss, chedder and parm. Thought it was the perfect autumn dish. Next time I will cut out the brown sugar because I think the squash is sweet enough.

Roasted Pork Loin

I thought this was decent as written. Hubby was late getting home so I sliced the loin, and warmed it up by browning it in the skillet with some of the juices.... now that made it wonderful! Next time I will add that step and cut out making the gravy.

Velvety Pumpkin Soup With Blue Cheese and Bacon

I found this recipe, got up from the computer, and had dinner on the table in 15 minutes! Awesome soup. I actually cut out the cayenne because of the kids but still wanted some spice, so I put a dash of chilli powder as garnish in my bowl. Also cut the fat by browning some canadian bacon. Also added brown sugar instead of molasses, and it looked very appealing. Will make on a regular basis.

Ibby's Pumpkin Mushroom Stuffing

I was not a big fan of this one. I love pumpkin anything, so I thought for sure I would love this. However, I didn't care for the overpowering sweet taste of the pumpkin bread. I much prefer this recipe with the whole wheat/whole grain bread. It allows the mushroom onion flavor to shine through. I also thought it was a lot of work. Adding that extra step of making the pumpkin bread wasn't worth it in the end.

Cranberry Apple Casserole

This was an awesome side dish to turkey dinner. It paired perfectly with the moist turkey and salty gravy. However, I did change things a bit. I used fresh apples cubed, fresh whole cranberries, and cut out more than half of the topping. I tossed the cranberries and apples in 1 cup of brown sugar and put them in the baking dish. I then combined about 3/4 C of oats and 1 C of chopped nuts and sprinkled them over the fruit. I placed small chunks of butter over top and baked it! Fabulous! Not too sweet and definitely not a dessert.

Swiss Chicken Bake

This was really a nice treat! It's a gourmet version of the comfy mushroom soup chicken dish. I love the added flavors of the mushrooms and swiss cheese. Will definitely make again but will add some garlic to creat more depth of flavor.

Great Pumpkin Dessert

Great recipe! The whole family loved it. I personally thought the pumpkin layer needed to be doubled. It seems a little out of proportion compared to the crumb topping. Next time I would double the pumpkin portion. I also agree that maybe you should cut in the butter with the cake mix before putting the pumpkin for more even coverage.

Pumpkin Corn Bread

Love these. I actully used Jiffy corn mix, 1 can pumpkin and 1 egg, and baked muffins for 12-15 min.....came out perfect! They taste like corn bread but are nice and moist. Next time I'm making with mashed sweet potates to go with a Carribean theme! My kids loved them
