Microwave Oven Peanut Brittle

This was my first time making peanut brittle and I'll definitely be making more. I added 6 slices of crumpled bacon and a pinch of cayenne pepper with the butter & vanilla to jazz it up a bit and the taste was phenomenal! Cleanup wasn't too bad once I added hot water to the glass bowl and microwaved it for 7-8 minutes.

I made a double batch of this wonderful treat and I'm glad I did because it didn't last long. My only regret is that I made it while my daughter was at preschool so she didn't get to help. Perfection!

Chocolate Eclair Dessert

This was SO tasty! I took it to Thanksgiving dinner at my aunt's and I ended up having to hide it so I'd have some leftover to take home and eat later! I frosted the top graham crackers before putting them in the pan and I tried the trick where you melt the remaining frosting and pour it into the cracks - it made it look sloppy because it didn't dry the same color as the other frosting. Anyway, the recipe was AWESOME! ***** I'll be making this again and again...

Pico de Gallo Chicken Quesadillas

Very delicious recipe! The pico de gallo is excellent with or without the jalapeno; I eat it with chips and add it to my guacamole dip. My family loved the quesadillas. I shredded my chicken and used orange pepper instead of green which gave it a sweet taste. Yum Yum Yum!! I definetely recommend using a plate to flip it or else you'll wind up with a big fat mess. I also serve mine with guacamole (Best Never Forgotten Guacamole).

Easy Never Forgotten Guacamole

This is the best guacamole I've ever made and I probably won't use any other recipe again. I mash my avocados and use fresh garlic and onions instead of powder. I add 3 tablespoons of pico de gallo because I like tomato chunks in it and also a tablespoon of lime juice so it doesn't turn brown too quickly. Everybody asks me for this recipe. My one complaint is it only stays fresh for a day before turning nasty-looking.

Baked Ravioli

Excellent recipe! I've made this a few times now, sometimes I use italian tomatoes, sometimes regular. I prefer the petite-cut type. My husband has requested I make this marinara sauce for all future pasta dishes, so I jarred up a big batch. He prefers the sauce with meat in it. My 7-year-old stepdaughter got to help make the sauce after asking me if chopping onions really makes people cry! A very easy recipe that makes the house smell heavenly. I use little or no water but my leftovers are a little dry; next time I'll go ahead and add all the water.

Famous Butter Chicken

My family really loved this recipe, even my extremely critical boyfriend. I melted the butter and poured it over the chicken and it was very juicy. Next time I won't do that because it made the breading soggier than I'd have liked. I said 'next time' because I plan on making this again and again.

Sarah's Salsa

Chicken With Mushrooms

I am not a fan of mushrooms, especially fresh ones, but I made this for my boyfriend who loves them and I was surprised at how great it tasted. Even my 4 year old who doesn't like meat ate hers. Definetely a keeper I'll make again. I'm glad I gave this recipe a chance.

Awesome Slow Cooker Pot Roast

This is the first recipe using onion soup mix that I've liked. I used 1 can cr. mushroom and 1 can golden mushroom. Hard to find a 5-6 lb roast, so I settled for 4.5 lb. Added carrots and potatoes. YUMMY! Made tons of delicious gravy. I was impressed. My 4 year old didn't like it, but she's not a fan of red meat as is. She loved the veggies and gravy though. Boyfriend was happy; we couldn't stop eating it. Even had the neighbors come over to try it! Will make again.

Cola Pork Chops

I made the recipe as is without altering anything and they were the juiciest pork chops I've ever made. My man couldn't believe it when I told him it was just ketchup, coke, and brown sugar. Didn't even need a knife to cut them. Excellent! This recipe is headed to my Favorites cookbook.

Grandma's Chicken Noodle Soup

My fiance asked me to make him chicken noodle soup when he was sick so I came to AllRecipes and found this recipe, which turned out to be perfect. I ended up eating most of the pan instead of him because it was so delicious! Just the thing to warm you up on a cold night.

Cottage Cheese Chicken Enchiladas

I thought I'd cut out some fat and use white corn tortillas; they got soggy and what I ended up with could only be described as Enchilada Stew. Funny thing is, it was amazing! Even better the next day and I bought yellow corn tortillas today so I can make them right. The only change I made was to use a smaller can of chiles. Couldn't have tasted better, even though it looked weird. Can't wait to try this again.

Almost No Fat Banana Bread

Definetely the only banana bread recipe I'll make from now on. The icing on the cake is the lowfat part. I added walnuts and it was absolutely heavenly. First time I made it it was gone within a day. Now I make 2 loaves at a time, or else muffins. Wish all recipes were this easy and delicious (not to mention lowfat).

Bacon and Cheddar Mashed Potatoes

LOVED this recipe! After reading other reviews I only used 1/4 cup of mayo so it wouldn't overpower the potatoes. Glad I did, they were perfect! Next time I'll peel half of the potatoes because there were too many peels for me. I'll probably add 2 more pieces of bacon. too. Everybody loved these as they were though. They didn't last long and I'll definetely make them a lot.

Brown Sugar Smokies

Made these for the Super Bowl and they were gone immediately even though I should have cooked them longer since I used thick sliced bacon and it wasn't quite done. The guys didn't even notice! Next time I'll use more brown sugar because there definetely wasn't enough. Took a little while to wrap them all but it was worth it. Great recipe!

To Die For Blueberry Muffins

These didn't last long at my house! I couldn't get my topping crumbly and I also pushed it into the muffin after reading reviews. Next time I won't push it in because you couldn't really taste it well. The kids loved them, the man loved them, and I loved them. I'll make a couple small changes next time but I'll definetely keep trying until they're perfect.

Cheesy Ham and Hash Brown Casserole

The whole family loved this recipe. I cut it in half since there are only 4 of us and it was the perfect amount. My man just raved about it all day, so I know I'll be making it on a lot of weekends from now on. Perfect just as the recipe is, but next time I might add a few slices of crumbled bacon.
