Elk Shepherd's Pie

This was great! I used a whole pound of elk meat and used a casserole dish. Four potatoes was still a lot to pile on top. My ten month old ate like a man and even loved the parsnip! I wasn't comfortable salting it as much as it needed with the baby eating with us, but just left the salt shaker out and it was fine.

Italian Style Meatloaf II

I make this all the time! Ground turkey is great to sub for beef in this recipe. I've never used the tomato sauce/sugar mix at the end, just served with ketchup on the side.

Chili I

This was really good and also froze well. The only thing I will change next time is to only add a half bottle of beer. I used a dark stout, which added great flavor, but overpowered. That's saying something coming from a beer lover! If you use a lighter beer it might be okay to use the whole thing.

Chipotle Shrimp Tacos

These were really good, I'm not usually a shrimp person and I still really liked them! I used small shrimp because they were on sale and added sliced avocado. The next day I made a dip by mixing the leftovers (minus the lime and cilantro) into a cream cheese/sour cream mixture. That was even better than the tacos!

Oatmeal Waffles

These are a staple in my house! I halve the recipe and make them into pancakes (makes 8 pancakes) I typically sub applesauce for the oil, and honey for the molasses. Also make my own "buttermilk" by mixing white vinegar and milk and letting it sit a few minutes. So good! Thanks for sharing!

MMMMM... Brownies

I made these for my mother in law on her birthday and let her take all the leftovers home. Well it's four days later and I'm still regretting not hoarding a few for myself! I followed another reviewer's advice and mixed in a half cup of chocolate chips at the last moment and goodness they were good!

I make these all the time using low fat sour cream, whole wheat tortillas, rotisserie chicken and always add a can of black beans into the filling. Even with these changes they are very rich and satisfying!

Mexican Salad

I bring this often to barbecues and it never fails to impress! Goes well with burgers and is a healthy alternative to mayo based side dishes. It might just be me, but I have found that this salad doesn't look or taste as good after leaving overnight in the fridge. I usually make it a few hours ahead of time though and it's perfect!

I've made this so many times! I just want to point out that it is easily made gluten-free by substituting the soup for one can diced tomatoes and a can of tomato sauce. Adding a little cornmeal will help thicken it up.

One-Pot Pasta with Tomatoes, White Beans and Pesto

I make this every time my pesto-hating husband is out of town! Usually substitute jarred sun-dried tomatoes and add some cut up rotisserie chicken to the mix. Last time I tried to use sun-dried tomatoes from a bag and it did not taste as good.

Three Cheese Baked Pasta

I've made this several times and often bring it to families that have just had a baby. It makes a ton and is great as leftovers! I always add garlic and a can of Italian-style diced tomatoes. Also I don't add the parmesan cheese until it's already served.

House Fried Rice

Left out the pepper and used two eggs. Also used short grain brown rice that I made the night before and let sit in the fridge. Best eaten out of the pan over the stove after already having seconds!
