Laura's Quick Slow Cooker Turkey Chili

Reviewed: Aug. 28, 2013
I've made this so many times! I just want to point out that it is easily made gluten-free by substituting the soup for one can diced tomatoes and a can of tomato sauce. Adding a little cornmeal will help thicken it up.

Oatmeal Waffles

Reviewed: May 27, 2011
These are a staple in my house! I halve the recipe and make them into pancakes (makes 8 pancakes) I typically sub applesauce for the oil, and honey for the molasses. Also make my own "buttermilk" by mixing white vinegar and milk and letting it sit a few minutes. So good! Thanks for sharing!

Fantastic! I used 1 can of kidney beans and 2 cans chili beans. So good, even when eaten the same day a making it.

Jennifer's Granola

Reviewed: Mar. 14, 2011
This is eaten almost every day at my house! I put it over oatmeal in place of sugar. I've used chopped walnuts in place of the almonds and love that too.

Italian Style Meatloaf II

Reviewed: Feb. 28, 2011
I make this all the time! Ground turkey is great to sub for beef in this recipe. I've never used the tomato sauce/sugar mix at the end, just served with ketchup on the side.

Chili I

Reviewed: Feb. 22, 2011
This was really good and also froze well. The only thing I will change next time is to only add a half bottle of beer. I used a dark stout, which added great flavor, but overpowered. That's saying something coming from a beer lover! If you use a lighter beer it might be okay to use the whole thing.

I make these all the time! I leave out the butter and use 2/3 whole wheat flour, 1/3 white flour.

Passion Bars

I am not much of a baker, but thought I could manage these. They were wonderful! I used a glass dish and baked 25 min.

Chipotle Shrimp Tacos

Reviewed: Jul. 21, 2010
These were really good, I'm not usually a shrimp person and I still really liked them! I used small shrimp because they were on sale and added sliced avocado. The next day I made a dip by mixing the leftovers (minus the lime and cilantro) into a cream cheese/sour cream mixture. That was even better than the tacos!

Southwestern Pasta Salad

Reviewed: Jun. 23, 2010
I tried to like this, even tried it the next day expecting to have my mind changed. It really was too dry for my liking and I was sure to only use half of the pasta box.

Elk Shepherd's Pie

Reviewed: Jun. 18, 2010
This was great! I used a whole pound of elk meat and used a casserole dish. Four potatoes was still a lot to pile on top. My ten month old ate like a man and even loved the parsnip! I wasn't comfortable salting it as much as it needed with the baby eating with us, but just left the salt shaker out and it was fine.

MMMMM... Brownies

Reviewed: May 28, 2010
I made these for my mother in law on her birthday and let her take all the leftovers home. Well it's four days later and I'm still regretting not hoarding a few for myself! I followed another reviewer's advice and mixed in a half cup of chocolate chips at the last moment and goodness they were good!

Turkey Sloppy Joes

Loved the sauce, hated the turkey breast. Maybe next time I'll use ground turkey instead.

One-Pot Pasta with Tomatoes, White Beans and Pesto

Reviewed: May 26, 2010
I make this every time my pesto-hating husband is out of town! Usually substitute jarred sun-dried tomatoes and add some cut up rotisserie chicken to the mix. Last time I tried to use sun-dried tomatoes from a bag and it did not taste as good.

Three Cheese Baked Pasta

Reviewed: May 19, 2010
I've made this several times and often bring it to families that have just had a baby. It makes a ton and is great as leftovers! I always add garlic and a can of Italian-style diced tomatoes. Also I don't add the parmesan cheese until it's already served.

House Fried Rice

Reviewed: May 4, 2010
Left out the pepper and used two eggs. Also used short grain brown rice that I made the night before and let sit in the fridge. Best eaten out of the pan over the stove after already having seconds!

I am new to asian cooking but found these to be easy to make and very good. I feel like adding the sweet chili sauce was a must and added a star to the recipe!

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Apr. 28, 2010
This is one of my favorite things to make! I use already cooked rotisserie chicken to make it easier and just mix the spices in without having to saute them.

Chicken Enchiladas II

Reviewed: Apr. 28, 2010
I make these all the time using low fat sour cream, whole wheat tortillas, rotisserie chicken and always add a can of black beans into the filling. Even with these changes they are very rich and satisfying!
