Slow Cooker Carnitas

I made this to go with cheese enchiladas for homemade enchiladas rancheras and it was FABULOUS. The pork was great, tender and tasty and amazing. I will make it again soon.

Balsamic Glazed Salmon

It was just ok. The sauce was not exactly right for the fish, but it turned out looking pretty and 1 of the 3 people I served it to really liked it, two of us thought it was just "meh." If I'm going to pay the extra money for fresh salmon, I'd like the recipe to really sing!

Alyson's Broccoli Salad

This stuff is so tasty. I add dried cranberries and use a bit more broccoli to extend it a bit. But what is really important is letting it sit for a few hours to let the flavors meld. I typically make this the day before I serve it. It's so much tastier that way!

Awesome Slow Cooker Pot Roast

I too seared the meat before adding it in...about 2 minutes on high on each side in a skillet. I also added 1/2 sliced onion and a small can of sliced mushrooms, just because my family really loves onions and mushrooms. It was fantastic. The biggest roast I could find was 3 pounds, but it didn't overcook even after 12 hours on low (long work day). The gravy was amazing. Most successful pot roast crockpot recipe I've tried!

Stuffed Green Peppers II

They asked for stuffed peppers, since we had about 20 come in at once in our garden. I tweaked this a bit, adding about 1/2 cup of diced green peppers, diced fresh mushrooms, and diced fresh tomatoes to the browning beef. I left out the stewed tomatoes and used regular rice from the rice cooker instead of uncooked minute rice. It took a bit longer to bake to get the peppers softer (more like 40 minutes) but when it was all done, it was great!
