Chicken Scampi

I like this recipe. It's quick, simple and I always have the ingredients on hand. I like to add a little Italian herbs, salt & pepper to the chicken. Is a good dish when you want something mild & good for busy Moms. You can even cheat and use 1/2 tsp garlic powder if your in a hurry. ;) I know it's "scampi" but tastes good with plain old white rice too.

Grilled Lemon Herb Pork Chops

Loved this recipe. Simple and delicious. I used bone in pork chops (about 1 inch thick). Grilled for 7 min. on first side and 5-7 on other side, then let rest for 7 min. Served with a baked potato and veggie. Perfect!

Lemon Garlic Tilapia

I love it when a simple dish has a lot of flavor. I liked this recipe a lot. The only thing different I did was the addition of capers, and slightly more garlic. The sauce left in the pan was awesome.

Pesto Pasta with Chicken

Really good!!! I didn't know that I liked sun-dried tomatoes but this recipe has convinced me! Great use of pesto and I liked the red pepper flakes with the chicken. Thanks!

I like this recipe a lot. Changes I made were cooking the onion with the meat (and a little garlic), a dash of garlic powder in the potatoes, and I even substituted corn (cause I can't get my crew to eat green beans). I think it is a good base recipe. Thanks!

Mom's Fried Fish

I love this recipe because it is so simple and good. The only changes I made were adding some old bay or cajun seasoning to the crushed saltines. I also chop capers (instead of using pickle relish) for the tartar sauce, that's just my preference. Thank you for the recipe!
