Great Pumpkin Dessert

I was searching by ingredients and came across this recipe. Of course, I didn't have exactly what was required so I adjusted. I substituted a can of sweetened condensed milk along with half a can of 2 percent milk in exchange for the evaporated milk and sugar. I did also increase the pumpkin pie spices, also the melted butter to one cup and sprinkled the top with chopped roasted pecans. Great warm with whipped topping. Cannot wait to taste is cold.

Best Easy Chicken Croquettes

Very easy with ingredients I had on hand. I substituted roasted garlic flavored crumbs and mixed the canned soup with leftover roasted chicken gravy. Very tender croquettes. My husband ate all the leftover mashed potatoes with the sauce but I enjoyed the gravy over bread.

Anytime Fruit Salad

Easy and delicious. I was looking for a recipe after stocking up on high quality cottage cheese on sale. I added roasted chopped pecans. My guest loved it and asked to take some home to his wife.

Tangy Sliced Pork Sandwiches

I am always looking for uses for cooked pork loin but I think egg foo yung is still the best answer. A good bottle of barbecue sauce would do better than this sauce since loin is rather dry from no fat. It would probably work better with leftover pork that has a higher fat content.

Best Italian Sausage Soup

Great but don't add too many noodles or they will soak up all the good juices and it turns into a stew. Break up the noodles also to make it easier to serve and eat. I also increased the basil. (After making this for the last couple of years, I have modified it a bit. I don't put in the pasta. Now I cook tortellinis separately and add into each bowl before ladling in the soup. Then I sprinkle with Parmesan cheese. Wonderful. Loved by all.)

Cranberry Whip

Easy and delicious. I used Cool Whip and it was just fine. Add chopped roasted pecans to make it even better. But don't skimp on the sugar or you might pucker too much.

Italian Sausage and Zucchini

Very good. I will use Hot Italian sausage next time and add Louisiana hot sauce to the sauce. I also added some Italian spices and garlic salt. Very good served over pasta with crunchy rolls. A complete meal with some yummy dessert.

Slow Cooker Lancaster County Pork and Sauerkraut

My husband ate it while I was at a meeting, but I couldn't bring myself to try it. He didn't want it again so the dogs got to eat the rest. I was disappointed. It was dry and not enough flavor.

Zucchini Brownies

Wonderful! Excellent! Delicious! So moist and no indication there is anything unusual about this recipe. The texture is more like a moist cake than brownies - which I like very much. It is so rich that I just sprinkled chocolate chips over it as it came out of the oven. Very highly recommended.

Beef Barley Vegetable Soup

This is a great recipe. I was hestitant to put the meat in the crock pot with no additional seasoning or liquid but trusted the previous reviewers. I put mine on low and was gone for a long day. I was a little concerned when I got home and the meat was rather dark so I turned off the crock pot and added some leftover sparkling grape juice into the pot while I chopped vegetables. I discovered I was out of onions and forgot to buy the barley but I decided to keep going. I cooked some elbow macaroni and added them in at the last few minutes. Wow, delicious. I sopped up the last broth with a roll. When I was putting up the leftovers, it smelled so delicous I wanted another bowl but I was full. Highly recommended. Next time I am going to put in the barley and onion and it will be even better. Thanks.

Sausage Barley Soup

This soup tastes good but doesn't look very appetizing in the bowl. I used drained canned spinach but I am sure frozen would taste even better. I also used German sausage. But even my son ate the entire bowl, while trying to avoid looking at it.

Cauliflower Casserole

My family enjoyed this dish. I did modify by adding in about half a cup of spicy cheese dip with the crumbs and also mixed in extra Tabasco sauce with the butter. I sprinked the top with paprika and it was very nice. Next time I may add all the ingredients but the crumbs and shredded cheese together and pour over cauliflower and add the crumbs and cheddar cheese on top.
