Potato Salmon Patties

Great quick recipe with ingredients in my pantry. I made them small as directed but would also be good larger and served on a bun as a sandwich.

Ultimate Chocolate Cake

This is a very good recipe. I didn't use the egg substitute, but added in two more eggs for four eggs total. I baked mine in a tube pan and sprinkled the top with chocolate chips. Moist and chocolatey!

Egg and Hash Brown Pie

My family loved this - especially my daughter who normally does not like "mixed" food. I modified it by cutting up the bacon in the frying pan with half an white onion chopped. I took out the onion and bacon but left in the grease and added a little more oil, browning the shredded hash browns until golden outside. I added about 8 slices of deli ham to the bowl and mixed together the onion, meats and browned potatoes, adding dried parsley and S&P. I also added dry mustard and about five shots of hot sauce to the egg mixture. I spread the potato/meat mixture in a greased casserole dish, spread cheese over this and then poured the egg mix over all. Baked for 20 minutes at 350 degrees then turned off heat and left it in for another 5 minutes so it would stay tender. I put the little bit of leftovers in the fridge to heat for one more before-school breakfast. I also think this would work for the leftovers to be chopped up and heated, put in warm tortillas and topped with salsa and some more cheese.

Pork Chalupas

I used to cook for the Wednesday night meals at church and this serves so many people very economically. I used a large roaster oven and cooked it all day before taking out the pork butt bones and shredding the meat. Serve it on a buffet and give lots of choices of toppings - including warm cheese & salsa dip to spoon over the top and finish with a dollop of sour cream. I serve mine over chips or Fritos instead of a tortilla. Also a good idea for a group meal where each guest brings one of the topping ingredients and the host prepares the meat and bean portion. Share the work and expense.

Beer Butt Chicken

Very tender but I don't think this requires the beer. A rack and good seasonings gets the same flavor and the issue of getting that can out of a hot, juicy chicken wouldn't be a problem.

Spicy Bean Salsa

This was very good and popular. I doubled the recipe and it makes so much but expect that the leftovers will be good for several days. For the party I made this, Fruit Salsa, tortilla rollups and Easy Chocolate Crackle Cookies and it was a great combination and easy to prepare ahead.

Fruit Salsa

A hit at the party. I didn't use the cilantro because I don't like it. I doubled the recipes except only used one large jalepeno pepper and it was delicious. So many asked for the recipe and couldn't believe the ingredients. I was dubious, but now I am a believer. Try it.

Dinah's Baked Scallops

This is a good and quick meal. I used bay scallops and followed some of the suggestions in the reviews. I will increase the additional hot sauce for a little more flavor next time. I didn't have any lemon juice so I added a packet of dehydrated lemon powder when I melted the butter and it worked well.

Cheddar Beef Enchiladas

This was very good. I made several changes to the recipe only because I didn't have all the same ingredients. I layered instead of rolling and this simplified the preparation and serving. I used one very large pan and spread the entire can of refried beans on the bottom layer of tortillas. Then sprinkled chopped onions, next the meat/rice and finally the cheese. For the sauce, I didn't have salsa so I combined one can of soup with a can of diced tomatoes and about 1/4 cup of taco sauce. Spread over the top layer of tortillas, sprinkled with more chopped onion and finished with shredded cheese. It stayed together well when I cut it to lift onto the plate and was delicious. Just add tortilla chips and guacamole salad for a complete meal.

Best Tuna Melt (New Jersey Diner Style)

This was great for a busy weeknight. I had everything in my pantry and needed to use up some rye bread and swiss cheese left from patty melts. I modified the cooking method and buttered the bread and put them down on a stovetop grill and then placed cheese on each side. I heated the tuna mixture in the microwave and spread it over one side, topping with the other cheese toast. (I didn't add the tomato.) Then I turned the sandwich several times to grill it. Tasted great again the second time a few nights later. Makes 5 generous sandwiches.

Tasty Fried Eggplant Balls

Well, the dogs enjoyed them. I think the eggplant needs to drain longer. I ended up adding more bread crumbs and whatever taste and texture was in the original recipe must have been diluted. Not worth the trouble.

Excellent. I used Hunt's vegetable spaghetti sauce with a can of diced tomatoes for the sauce. I also used Italian-seasoned bread crumbs with the flour. So tender and delicious.

Creamed Hard Boiled Eggs

Great for a light meal. I often buy several dozen eggs and hard boil one dozen while I put up groceries. I added garlic salt, pepper, dry mustard and parsley to the recipe. My husband said his mother made a similar dish when he was a child, but this was much superior and more flavorful. He suggests that I chop the eggs as she did to make it easier to eat over toast points.

Cauliflower Casserole

My family enjoyed this dish. I did modify by adding in about half a cup of spicy cheese dip with the crumbs and also mixed in extra Tabasco sauce with the butter. I sprinked the top with paprika and it was very nice. Next time I may add all the ingredients but the crumbs and shredded cheese together and pour over cauliflower and add the crumbs and cheddar cheese on top.
