Creamiest Rice Pudding

My husband said make this one from now on. I added mixed dry fruit and used leftover rice. This tasted best when first made but reheat fine for a short time in the microwave and I serve rice pudding with whipping cream poured on top. Yummy.

Truck-Stop Buttermilk Pancakes

My husband discovered bugs in the Bisquick so I suggested pancakes from scratch. He had never made them without a mix but was very pleased with the tender results - even if he wants to mix until all the lumps are gone. Very good.

Surprise Banana Cake

I had two ripe bananas so I cut the recipe in half, put in an 8x8 pan. Instead of incorporating the nuts into the batter, I sprinked half of the surface with pecans (my husband's preference) and half with chocolate chips for my daughter. Baked in 375 degree oven for 25 minutes. Perfect. Oh, I did add the baking powder suggested by others.

Blonde Brownies I

Yummy. I doubled the recipe on the site and made it exactly as is. I used a dark non-stick sheet pan and cooked for 25 minutes. My daughter loves it and said it tastes like a big cookie.

Coq au Vin alla Italiana

This did not have enough flavor. I ended up adding Sweet Thai Chili Sauce and more salt and pepper, but it was still not very tasty. Needed more heat?? Don't think I will make again.

Red River Beef Stroganoff

Pretty good. I used chuck roast and cooked for about 30 minutes on simmer. Would have preferred it to be thicker so will adjust next time. Also needed to add more salt and some large shots of hot sauce.

Cream of Coconut Cake

I am rating the cake only and it was excellent. I filled between the layers with lemon curd and frosted with Sturdy Whipped Cream Frosting (on this site) sprinkled on top with coconut. Excellent. My standard coconut cake for now and forever.

Sturdy Whipped Cream Frosting

Excellent recipe. I will adapt this for every cake I make in the future. I increased the sugar - using 1 cup powdered sugar. I also used all coconut extract and sprinkled the top of my Cream of Coconut cake with coconut. A wonderful birthday cake for my 19-year-old son. Delicious. My daughter put in her request for the chocolate version but I don't think I can wait until her birthday to try it.

Orange Buttermilk Salad

Very tasty. I modified it. One package of sugar-free orange dissolved in about 1/3 cup of boiling water, add in 1 cup buttermilk. Mix in 1 large and 1 small can of drained mandarin oranges and half of a large container of large-curd cottage cheese. Set up very nicely in a square casserole dish. I will try pinapple/lime next. (I didn't reveal the buttermilk in the recipe until after my husband said he loved it.)

Scottish Shortbread IV

I used the suggestion of the drop cookie, using a scoop and dropping directly onto the sheet. Then I gently pressed down with two fingers. My daughter dipped one half in melted chocolate bark and some she drizzled in a random pattern. Very good.

Maybe a little too sweet for me. After cooling I cut into squares and froze half the recipe for later. Warm in microwave and serve with cream.

Pecan Sour Cream Pound Cake

Excellent. I add about 1/2 cup ground pecans to the flour mixture, using all-purpose flour. I also used about 1 1/4 cups of sour cream. I also used my tube pan and sprinkled the top not only with pecans but also with edible glitter for the holiday season. This filled the tube pan and made a very tall cake. I also cooked at 325 degrees for 1 hour 10 minutes and it came out perfect.
