Italian Bread Using a Bread Machine

Exceptionally good recipe. Making again today and added some diced garlic, dried basil and grated parmesan cheese to the bread maker. Looking forward to more great homemade bread.

Pork and Shrimp Pancit

Of course, I had to modify somewhat based on my cupboard contents. I soaked 2x the rice noodles and drained them. I used green cabbage, cubed pork and onions with chopped garlic and some ginger paste. To the other ingredients I added Pad Thai sauce paste and some water so I would have enough sauce, then tasted all the ingredients mixed together and added soy sauce, a little Hoisin sauce and then about a cup of cashews. Tasted great.

Cheesy Chicken Poblano Chowder

Really good. I did make changes. I put in a whole chopped onion and some garlic in the oil along with two chopped slices of bacon then added the roasted peppers (only 2.) Then added the flour, chicken broth and grilled pork loin cut into bite-size pieces. I actually used shredded cheese but I think that processed cheese might work better and then top with shredded cheese.

Chocolate Eclair Cake

I used cookies 'n cream pudding mix because that is what I had and regular honey graham crackers. I also added about 3 oz of cream cheese in with the pudding because I wanted to use it up. Topped with some leftover chocolate sauce made for a cake, tasty but a little hard to cut into. Think I will just use chocolate frosting next time. Delicious - even for breakfast.

Whipped Carrot Salad

I modified it because my husband loves cottage cheese in his salad. I only put one can of pineapple with about 3/4 cup of pecans added to the food processor after blending the gelatin and cream cheese and pulsed a few times so the pineapple and nuts were chopped. Then I put the mixture in a large bowl, added about a large container of cottage cheese, the shredded carrots and the whipped topping. Delicious.

Coconut Cream Pound Cake

Don't be misled (as I was) by the reviews saying it needs to bake longer. Set your timer and then test. I cooked mine an extra 15 minutes per many reviews and it was too dry. Good flavor. I am slicing the cake and going to use if for a trifle but may not even try this recipe again.

Pumpkin Gingerbread

Very good. Baked in a tube pan with walnuts and dried cranberries sprinkled on top. Baked for one hour and it was perfect. Great for dessert, snacks and breakfast.

Turkey Shepherd's Pie

My husband (a big fan of mashed potatoes) loved this one especially when there were plenty left after the initial meal. He likes leftovers that are easy for him to reheat himself. That makes it a winner in my book.

Chocolate Mousse Pie

Easy to follow recipe and great results. I used a baked pie crust because I had planned to make a different chocolate pie and then couldn't find the cornstarch. I made the recipe as written except I added one egg and I whipped a full cup of cream and folded it into the chocolate mousse and poured the entire contents into the shell. There was enough left to make two small servings that we tasted a few hours later. I wanted to let the pie set up overnight so it would cut nicely. I am not going to add the second layer and may decorate with chocolate curls.

Rustic Fall PHILLY Fruit Tart

This is very tasty. The crust is tender and the filling was just right - I used only four purple plums. I did use tapioca instead of cornstarch and dusted with confectionery sugar after it cooled.

Whole Wheat, Oatmeal, and Banana Pancakes

I didn't have regular oats so I used three packages of instant oatmeal (Cinnamon Roll flavor) and it worked out well. They had good texture but are probably a little too healthy tasting for my family and very filling so. Don't know if I will make them again.

Soft Giant Pretzels

My first try at pretzels and this was a great recipe. I did add a little salt to the ingredients in the bread maker and used 2 tablespoons brown sugar and 1 tablespoons of light corn syrup. I also had the water just simmering and set each dough pretzel on a large and dipped them into the water. I didn't have any trouble with the knots coming loose. Make sure and coat each hot baked pretzel with water and immediately sprinkle with kosher salt. Enjoy.

Pueblo Green Chile Stew

I modified this some by adding a can of Hatch enchilada sauce. I cut up some pork shoulder, rolled the cubes in flour and browned them. Then added the onions with some garlic. This was so good and the leftovers were just as great.

Kolaches From the Bread Machine

These take longer than you expect but are very good. Bake on a shiny baking sheet to avoid over brown bottoms on dark metal. I made both cherry kolaches and sausage ones and plan to freeze half of each for weekdays.

Rum Raisin Bread

I modified the recipe by increasing it about 50 percent since several reviewers commented that the loaf was small. I wasn't sure I had the proportions correct but it came out great. I am going to add the raisins later in the kneading process so they are not as chopped. I also didn't add the rum extract to the recipe, did use 1/3 dark raisins, 1/3 golden raisins and 1/3 dried cranberries, coated the fruit in nutmeg and cinnamon before added it to the dough. A soft, tasty loaf.

Pistachio Crusted Chicken

My daughter and her friend loved this. I didn't have any Dijon but had some Vivi's chipotle carnival mustard and it added just the right amount of heat and sweet with the honey. I mixed some more mustard and honey together for a spicy dipping sauce. Really great.

Buttermilk Pie IV

I needed items to sell at a youth bake sale and had buttermilk on hand. Since disposable pie tins are rather small, I chose 12 servings and it filled those smaller crusts perfectly. Topped one with coconut, one with cinnamon and another with nutmeg. Did use one stick of butter and 1/2 stick margarine, 2 cups sugar, five eggs, and the rest as portioned by the recipe for 12 servings. Now it is hard to take all three to the sale - smell divine.

Italian Sausage With Spaghetti

Very good. I didn't have ripe olives so I substituted a can of diced tomatoes and added a few dashes of hot sauce and garlic salt. Even my husband, who does not like mushrooms, enjoyed this meal.
