Spicy Chicken and Sweet Potato Stew

This is really good. I used black beans instead of kidney beans and didn't use the cilantro - personal preference. I also used cubed raw chicken thighs which I sauteed with the onions. I think this would also be great with pork. Gets better every day.

Pork Medallions with Port and Dried Cranberry Sauce

The pork was fine but I had to add ingredients to get the flavor up in the sauce. I did not have port so I used red wine. I also added Mango hot sauce and some cranberry horseradish to give it more heat and sweet. Excellent product in the end and gave it a more "chutney" flavor and texture.

Cranberry Sweet Potato Bake

I made this for Thanksgiving and it was well received by almost all the guests. In my small town, the grocery store doesn't carry granola but I used some Kashi cereal and it was good. I just sliced my sweet potatoes into rather thin rounds after peeling and layered with the other ingredients and baking until the potatoes were tender then added topping when reheating the next day. In my very traditionally minded family, several asked for the recipe.

Hot and Sour Chinese Eggplant

I tripled or more the sauce and added green peppers, onions and zucchini along with sauteed chicken. It was tasty but not hot and spicy. I'll need to increase the heat with red pepper flakes next time.

Mexican-Style Goulash

I did add cumin, a small can of chopped green chiles and a can of drained black beans but this was a hit with my daughter's friends. I doubled the recipe and it produced at least 10 servings quickly and economically. I'll make this again so I can try it.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

Superb. I did chop the avocados and mango and added some chopped red pepper to make more of a salsa. Didn't have orange juice so I used Simply Lemonade, added Hot Mango Pick-a-Pepper sauce and honey for the sauce over the chicken. Mmm. Delicious.

Pineapple Orange Sorbet

Instead of plain orange juice, I used the real orange juice with mango. I used Splenda for the sugar and also canned pineapple sweetened with Splenda and the sorbet was very good. But even better was the smoothie I made with the leftovers. I placed the frozen sorbet in my Ninja pitcher and added Lala brand Mango yogurt. Blended until thick and so delicious. So delicious and refreshing in the plu 100 degree Texas weather. I don't know if I will ever eat this as plain sorbet ever again.

I had all the ingredients (except the carrots) picked fresh from my garden and waiting for to be used in a new recipe. I cubed and salted the eggplant and then prepared the remaining vegetables. Sauteed everything together low and slow stirring frequently, added salt and red pepper flakes and it was finished. I didn't chill it, just ate some on Multi-Grain Club crackers while still a little warm and it was very delicious. A great us of eggplant.

Sweet Chunk Zucchini Pickles

Sweet, crunchy and very tasty. Super easy and doesn't take much time at all but realize the work is spaced out over three days. I used four very large zucchini to get the 16 cups and did not include some of the center with the seeds. DO NOT stick your hand down in the lime water to push down the zucchini chunks or you will have a shriveled hand (personal experience lol). It doesn't seem like there is enough pickling liquid when you add in the vegetable pieces but during the resting time the liquid will cover the zucchini although I really didn't have enough liquid to completely cover all the pickles in the 8 pint jars I filled. I put about a half cup of pickles in a container in the refrigerator. I went ahead and sealed the jars to leave on the shelf because I don't have room to refrigerate all of them. I doubt anyone who will be gifted with these pickles will have any idea that they are zucchini. Very good. This would be a great project with your kids.

Easy Slow Cooker Squash

My family enjoyed this dish. I cooked the vegetables longer in the water than directed in the recipe because the squash were a little older with tougher skin. Make sure to drain them very well so the cheese sauce is not watery. We added salt and pepper to our individual servings because my husband has to watch his salt intake but I think it would benefit from some seasoning while cooking. I think this would also work to cook up the squash and onions, drain well and freeze in portions to complete later. Thanks floridabeaches123.

Grilled Italian Hamburgers

Successful meal. Three of us thought they were really tasty but my daughter thought there was too much flavor of Italian sausage - probably from the 2 teaspoons of fennel seeds. I actually used two pounds of lean ground beef and one pound of bulk sausage and used the full recipe amount of seasonings. It was too hot to grill outside so I grilled them on my stovetop pan and then finished in the oven. After putting the cooked meat patties on sub rolls, I added sauteed red peppers and onions and provolone cheese, wrapped in foil and heated for 15 minutes. My daughter added pesto to hers after it came out of the oven. I don't think serving them on the bun is necessary. They would be good covered in grilled veggies and shredded cheese and heated in the oven until the cheese melted.

Pan Fried Brussels Sprouts

Really good. I didn't put in any garlic and I used some bacon fat to saute the onions and brussel sprouts. Very tasty using frozen sprouts that I had allowed to almost thaw.

Chocolate Mousse II

Love how easy this recipe is with so few ingredients. I only had bittersweet chocolate chips the second time I made it so I added one teaspoon of sugar per ounce of chocolate. I like making this in my Ninja blender because it is much easier to get out all the rich chocolate goodness to blend into the egg whites.

Cheese-Filled Coffee Cakes

This dough is really a no-knead dough and tastes fabulous. I put cream cheese filling in one of the large coffee cakes along with a drizzle of caramel syrup. It did bake into the bread and needed something more. The second I filled with chopped apple pie filling with some extra sugar and chopped pecans with a drizzle of caramel. I haven't cut into that one yet and may freeze it. These are big coffee cakes. I braided them and brushed with egg wash and they look professionally made. Delicious and impressive. Will make again and recommend.

Beignets

Made beignets one morning and they were very good but had lots of dough sitting in the fridge for more than a week. I read another reviewer who said the dough makes great cinnamon rolls so I decided to try. The dough rolled out beautifully even though it was in the fridge under plastic wrap for at least 10 days. It took a little longer for them to rise but they are in the oven now and looking delicious. Amazing.
