This was fine. A little bland with ham and I think I will use Italian sausage and more red pepper flakes next time along with fennel seeds.

Bacon Quiche Tarts

This was tasty. I modified it based on items in my own cupboard and baked in a pie crust to make one large quiche. Kept well and my husband has enjoyed the leftovers so that is a winner.

Whole Wheat Oatmeal and Banana Pancakes

I added spices and an extra banana. These cooked up perfectly on the griddle and are very filling. I am putting the extras in the freezer in meal size portions.

Microwave Lemon Curd

Fast and fabulous. I only ended up with 1/2 cup of juice from four small lemons, added two egg yolks as recommended and added an extra 1/4 cup of sugar. Only took 2.5 minutes stopping after each minute and then after the last 30 seconds and stirring.

All American Roast Beef

I used a probe meat thermometer with an alarm and set it for 145 degrees. Next time I will set it for 130 degrees because the meat went from medium rare to medium while resting. I added dried thyme to the rub and it was very tasty. I added water to the pan drippings and poured them into the remaining sliced beef. I think I'll make beef pot pies with the leftovers.

Pumpkin Black Bean Soup

I added a pound of cooked chipotle-seasoned pork sausage from HEB and several tablespoons of ground cumin along with a can of tomatoes and green chiles. Really good with a dollop of sour cream.

Ham Cake-ettes

This was fantastic. I doubled the recipe and got 10 patties and had to fight so that I could even get one. Everyone in my family loved it. The girls and I had a fried egg on top and it was extra good. Highly recommended. I cooked some chopped white onion in butter before adding to the mixture and left out the dill weed.

Cajun Chicken Lasagna

I had to make some modifications based on what was in my cupboard - no bell pepper, I used cooked chicken and added at the last minute, made the Alfredo sauce and used smoked sausage and added hot sauce to the Alfredo. Also used Swiss cheese for the mozzarella. It was still great.

Almond/Apricot Coffee Cake

Excellent coffee cake that can be easily modified to the ingredients in your pantry and personal preference. I baked mine in a tube pan and added some fresh blueberries that needed to be used up. I also substituted plain yogurt for the sour cream and took the apricots out of pie filling and blended. It baked for 60 minutes at 350 degrees, cooled for 20 minutes and came out just beautifully. I'll be trying many more combinations.

Pecan And Chocolate Espresso Pie

This came out tasting great. I did modify it a bit. I used a teaspoon of instant coffee dissolved in a tablespoon of water and then added the eggs. I used a ready-made pie crust and pre-baked as directed. After following the directions carefully, it was still rather runny so I added another 1/4 cup at least of cocoa and also about a 1/4 cup of cornstarch and beat those in well in the mixer. I also sprinkled the top with some sea salt just because I wanted to. Then I thought I was turning down the heat from 400 degrees to 350 degrees after the first 10 minutes but accidentally changed the timer instead. About 20 minutes later I could smell the crust getting brown so I opened the oven to add a cover around the edge and realized what I had done. I could tell the pie was ready so I took it out and cooled it almost completely before slicing. It was just a little warm and stayed together very nicely and tasted very good. We ate it so fast that I was planning to add some whipped cream. Maybe next time because I'll make this again.

Crunchy Oven Fried Tilapia

Spray foil with PAM, then after putting prepared fillets on foil spray and then sprinkle with olive oil. Bakes up crispy. I used pancake mix and cornbread mix for ease and put much more seasoning. Really tasty.

Spinach Tomato Tortellini

This was very good. I used small cheese ravioli but that doesn't really matter. I also added some Italian sausage and some more fennel seeds and red pepper flakes. And thickened it was a little cornstarch mixed with some milk.

Sausage Red Beans 'n' Rice

This is truly a 30-minute meal. I used canned pinto beans with jalepenos and added some more hot sauce to my bowl, but extremely well received by my husband who ate two bowls.

Chicken Thigh and Dumpling Stew

This was excellent but I was in a hurry so I left the thighs whole. Next time I will take the time to take off the meat but I think this would be best served without the dumplings (although my husband loved them and I use flour tortillas cut in bite-size pieces and cooked in the sauce until they are soft). I am thinking this would be great over toast.

Chocolate Oatmeal Cake

Excellent recipe. I used some chocolate oatmeal packets for the oats and that worked out great. They included some flax seeds but the extra texture was not a problem. For the frosting, I didn't have any instant coffee granules so I just brewed some strong coffee and let is cool. I also used some shortening in place of part of the butter and it was fluffy. My daughter has requested this cake again this weekend. I think I will make it as cupcakes and just put powdered sugar on some and frosting on the side to add to others.

Multiplied the curry several times, used diced apple instead of green onion, hot mango sauce instead of lemon juice and added some mango chutney. It was great. Obviously this is a recipe that can stand up to some changes because of what ingredients I have on hand. I'll make this again.
