Best Spinach Dip Ever
I make this for every gathering we have. I double everything of course to make a large batch and it gets eaten enthusiastically every time. There is only one market in town I can find LEEK soup at but it's worth the trip. The only change I make is doubling the spinach (so I use 20oz in my doubled batch) but that is suited to taste. If i'm unsure of my recipients i'll leave it at the half package because it's just creamy goodness and wont offend anyone with excessive greenery :)

Italian Pasta Salad I
This recipe is 5 star - it's a very very good base salad that when left alone is delicious but allows for plenty of modification. Every time I make this my bowl comes back empty. I intend to make this for both a work potluck and our own thanksgiving meal because it's so easy to up the batch. I personally use a high quality italian, and a high quality creamy caesar dressing which I think helps - the first time I made it was with a value brand and it was okay, but nothing special. I don't usually do the amount of bell pepper but that's to my companys preference. I dice the onions very fine and I also add grape tomatos and sliced black olives occasionally. A very good, very customizable dish!

Sophie's Zucchini Bread
I love this recipe because it is so insanely easy to convert to vegan by replacing the eggs - you don't lose any quality at all like you can with some baked goods. My best friend is vegan and LOVES spice breads, but when is the last time you saw vegan baked goods offered up at the market? I add a few of my own spices, allspice etc. and occasionally substitute in some vegan chocolate chips as well - delish!
