About this Cook
Never was much a cook per say. But, after the divorce, I got tired of tacos and spaghetti all of the time. I resolved to learn how to cook and to learn different techniques of good cooking. I can do it! I recently started a blog called "This .....; That .....; and There .....!"
My favorite things to cook
Starting to learn Peruvian dishes and how to cook them. Different chicken dishes and finding a way to add pasta to the recipe.
My favorite family cooking traditions
Chop suey, oven cheeseburgers, and Castleberry's Pork in a can. Good times, I tell you. You don't know you are growing up poor until you experience the world. But, growing up poor taught me more than if I'd grown up rich.
My cooking triumphs
My homemade Mac and Cheese is the best! Yes, it is true. The Best!
My cooking tragedies
My 11th grade French pastries (entered in a district school contest) that had a pronounced onion taste due to using the bowl my mother had used to store chopped onions. You live and you learn.

Easy Roasted Vegetable Lasagna
I omitted the bell pepper and onion in favor of fresh broccoli and baby spinach. All other ingredients remained the same. It was the best lasagna I've ever made.

Crispy Chicken Parmesan
I used thin sliced chicken breasts. For my crumbs, I used Italian seasoned bread crumbs and added fresh grated Pecorino Romano cheese to the crumb mixture. I used a jar of marinara sauce and added some sauteed Baby Portobello mushrooms to the sauce mixture. I served with roasted asparagus and roasted Roma tomatoes. It was the first meal I cooked for my girlfriend. She and I both enjoyed it.

Penne with Chicken and Asparagus
An excellent dish. I added Artichoke Hearts, Cherry Tomatoes, Baby Bella Mushrooms, Non-Pareil Capers, basil, and oregano. I marinated my chicken in Italian dressing before sauteing it. I served it on a bed of Aji Amarillo sauce.
