Sweet Potato and Fennel Hash

I made this with apple cider instead of whiskey like one of the reviews recommended. It was delicious! One of my guests told me that she hates sweet potatoes, but that she actually enjoyed them cooked this way.

Banana Pudding IV

This is yummy for banana lovers. I'm only giving this recipe 4 stars because it doesn't mention that the cream cheese needs to be softened to room temp.! That may be a no brainer for most people, but people like me who take recipes VERY literally, (especially when they've been reviewed by 1000+ people before me), look for this sort of thing. (Seriously, I checked the recipe about 3 times to see if it said to let the cream cheese soften!) So for all of you literal recipe readers out there, DO let the cream cheese sit out for a while! Everything tasted fine, but no matter how much I mixed, I couldn't get out the cheese lumps. Oh well. :)

Best Spanish Rice

Super yummy! Pretty quick and easy, which is awesome. To be fair, I used a small can of Rotel tomatoes instead of salsa. I think I'd like salsa a little better, but either way, it was delicious!

Apple Crisp II

So yummy! Had a lot of apples to use up, and this was delicious! We used peeled Junami apples, and I just used the coring/slicing tool that I keep to cut apples for my toddler, so the slices were thick, but wonderful. The only change that I'd make next time would be to either cut or eliminate the water. The apples cook down on their own, so we had quite a lot of sauce at the bottom when baked. If I'm feeling adventurous, I'll go ahead and add nutmeg like reviewers are talking about, but the recipe is really delicious on its own.

Easy Creamed Cauliflower

A great way to make cauliflower more interesting! Very simple. The sauce is very rich, so I served it on the side. We entertain teenagers a lot, and it was a hit with them!
