Born and bred Texan, I love Tex Mex and it's the thing I'm most comfortable cooking. I work full time so I like things that are easy and fast. I'm also trying to lose weight and protect my heart so healthy foods are a focus.

I'm a lazy cook. If it has more than ten ingredients or more than a couple of steps, my eyes glaze over.
Did I mention that I love Tex Mex? I'm also a fan of low cal casseroles for breakfast and dinner, although my husband is a meat and taters kind of guy. (Poor guy.) ;)
My favorite family cooking traditions
Thanksgiving is my very favorite holiday and I love planning the meal starting weeks ahead of time. It's the one occasion for which I'll break my quick-and-easy-recipes-only rule. Cornbread dressing is my focus and I'm constantly on the prowl for the best-dressing-ever recipe.
My cooking triumphs
I've always been leery of cooking chicken because I inevitable overcook it, but last night I made some AWESOME Italian chicken breasts and it's spurred me to be more brave!
Thanksgiving is usually a triumph. I really put my all into it. :)
My cooking tragedies
When I was first married, I tried to get all gourmet with chicken breasts. Suffice it to say that incorporating cinnamon into a poultry recipe is best left to experienced cooks!
