About this Cook
Born and bred Texan, I love Tex Mex and it's the thing I'm most comfortable cooking. I work full time so I like things that are easy and fast. I'm also trying to lose weight and protect my heart so healthy foods are a focus.
My favorite things to cook
I'm a lazy cook. If it has more than ten ingredients or more than a couple of steps, my eyes glaze over. Did I mention that I love Tex Mex? I'm also a fan of low cal casseroles for breakfast and dinner, although my husband is a meat and taters kind of guy. (Poor guy.) ;)
My favorite family cooking traditions
Thanksgiving is my very favorite holiday and I love planning the meal starting weeks ahead of time. It's the one occasion for which I'll break my quick-and-easy-recipes-only rule. Cornbread dressing is my focus and I'm constantly on the prowl for the best-dressing-ever recipe.
My cooking triumphs
I've always been leery of cooking chicken because I inevitable overcook it, but last night I made some AWESOME Italian chicken breasts and it's spurred me to be more brave! Thanksgiving is usually a triumph. I really put my all into it. :)
My cooking tragedies
When I was first married, I tried to get all gourmet with chicken breasts. Suffice it to say that incorporating cinnamon into a poultry recipe is best left to experienced cooks!

Classic Goulash
Really like this and will make it again, but will use a teaspoon of seasoned salt instead of a tablespoon. It's way too salty for me. (I used Tony Chachere's Creole because it's what I had on hand and it gave it a tiny little kick.) Topped it with a dollop of sour cream and it was lovely.

Best-Ever Texas Caviar
The first time I made this, I didn't pay close attention to the recipe and didn't cook the dressing. It worked just fine so I don't bother with the extra step - I just dump it all together. I make this so often that I do it from memory. I don't use the jalapeno or green chiles and usually forget the garlic powder, and it's still wonderful. Healthy and yummy, it's a favorite!
