Mom's Mexican Cornbread

This was a good idea, but I was running short on time and altered it somewhat. I browned the ground beef with onion and green pepper then added some Spanish Gardens taco sauce. I left this mixture in my ovenproof skillet and topped it with shredded mexican cheese. I mixed up a Jiffy corn muffin mix adding a can of cream corn to it then pouring it over all of the cheese and beef in the skillet. I baked it until the cornbread was done and served with baked sweet potato fries that had been shaken in a ziploc bag with a little veg oil, half a packet of taco seasoning and honey.

Erica's Delicious Slow Cooker Beef Roast

This was the best roast I have made. I used a 3 lb. arm roast browned in a skillet then laid over a bed of diced onions and garlic that were soaking in 2.5 cups of beef broth. I made slits in the beef to insert garlic cloves, covered with roasted garlic cream of mushroom soup (yes, we love garlic) and cooked it on low for 7 hours. It was sooo tender and delicious. I did have to add some flour to make the gravy, probably due to the extra broth but it was delicious! Instead of adding carrots or potatoes I made a dutch potato recipe (found on this site) which is basically mashed potatoes with carrots. All of it was a hit with even my picky eaters!

Easy Corn and Crab Chowder

This was a great recipe for a windy, cold Fall night. I doubled it for my family of six and we had 2 servings left over. I sauteed the onion with garlic cloves in olive oil, set aside and wiped out excess oil, then started the butter melting in the same stock pot. I kept the flour and did not find it to be too thick. I also added chicken bouillon granules after the flour was mixed when I added the cooking sherry. I used one can of evaporated milk and the rest regular 1% milk. Instead of cubed potatoes, I used leftover dutch potato recipe (recipe on this site) which is a mashed carrot and potato mixture. That step made it much easier. We had turkey bacon as a garnish, but it did not need it. We served it with a Elaine's mom's homemade bread recipe from this site. I love crab and will definitely try it again with that addition, but it can be a great vegetarian meal as well!

Spicy Baked Sweet Potato Fries

I only used 4 sweet potatoes and did not measure the oil and used too much so they were oily. Will try again with less. I used a gallon ziploc baggy to pour the oil into and added 1/2 pkg of taco seasoning and poured in some honey. They were delicious but too oily. I will definitely try these again, they are a nice addition to a mexican meal.

French Toast Bake

Made this recipe exactly and it was great! My bread was only a couple of days old and not left out to dry or anything. I assembled it first thing in the morning and put it in to bake at dinner time. I used frozen blueberries and chopped pecans. Serve with turkey bacon or sausage patties and a splash of warm maple syrup and it's a crowd pleaser. I found adding the melted butter browned it nicely and added a nice butter flavor.

Creamy Macaroni and Cheese

Unfortunately this wasn't a hit at my house. I have 4 little girls who adore mac and cheese, but this one not so much. It wasn't all eaten by our family of six! I think the sauce is more reminiscent of a tetrazzini and was too bland. It was also too sharp. Maybe using more and milder cheeses and adding some cayenne would help.

Apple Cake V

The whole family loved this! I changed the all purpose flour to 1c and added 2c. whole wheat flour. Also, I cut the oil back to 1/2c. and added 1c. cinnamon applesauce. It was more like a coffee cake, so basically it's good anytime of day!
