Classic Waffles

I got a waffle maker for my birthday yesterday. I wanted a simple recipe to try it out with as the recipe that came with the waffle maker involved yeast and I wanted waffles RIGHT NOW, not when the yeast decided to proof. This was the first time I've ever made waffles and I really don't think I have to search any further for a different recipe, this one is a keeper for sure! I took suggestions from other reviewers and added a bit more sugar (four tablespoons rather than two) and I beat the egg whites separately and folded them into the batter. You'd think I've been making waffles all my life! They came out fluffy and golden brown. They do go soggy very quickly though -eat immediately! I'm going to try freezing and toasting them. I may never have to buy another box of Eggos again! I'm thinking of making country gravy with fried chicken and waffles next. I can hardly wait!

Princess Cookies

This dough was ridiculous to work with. Not enough time in the fridge and it is too sticky.. too much time in the fridge and it's too crumbly. For me, the end result is just an OK cookie. Not lemony enough and that's after adding extra zest. Hopefully the lemon drizzle will add a little more flavor to it.

Gingerbread Biscotti

One word: Bland. And that's after adding salt that wasn't even in the ingredient list. I can't imagine how boring these would have been if I had followed the recipe exactly as written. I'm not sure even doubling the spices would help this cookie. They're going for Christmas dinner so I'll try salvaging them by dipping them in white chocolate. Hopefully there will be some people there who don't mind them. My daughter already said that she likes them so at least they won't go to waste in the compost bin. Probably won't make these again.

J.P.'s Big Daddy Biscuits

This was absolutely delightful. What a great base biscuit recipe. I whipped these up this afternoon for the first time ever. I didn't knead it at all, just kind of pressed it together and shaped it into a rough rectangle and cut them into squares. I added some shredded cheddar and mozzarella cheeses to it. The possibilities are endless. Raisins and cinnamon.. dried cranberries and orange peel... diced ham, cheese and chives. Next time I might even try them plain, I'm sure they're wonderful that way too!

Cranberry Pistachio Biscotti

I give this recipe five stars as it is written. I never change anything about it because it is perfect as is. I make this every year for Christmas and always receive rave reviews. The only problem I've ever had with it is when I over-baked the cookies the first time I ever made then and that's not the fault of the recipe poster - I just lost track of time and they turned a little "Cajun". Even then they still tasted good once I scraped off the burned bits.

Fluffy Pancakes

I have found the last pancake recipe that I will ever use. I promise to never use another. I've tried so many different variations and haven't loved any of them, so we've been relying on Aunt Jemima for the longest time. Well, Auntie can go live at someone else's house now. I don't need her anymore. I didn't change a thing on this recipe, made it exactly as written. They are the perfect pancake!

Vanilla Crepes

These were amazing. My mother makes a Hungarian version of crepes and these taste exactly like them. I didn't change anything in the recipe. Even my husband enjoyed them and he doesn't like to try anything new! I'll be making these many more times, thank you!!
