Baked Cheese Sticks

My family enjoyed these. I made them as written, using homemade mozzarella from goat milk. I appreciate having an alternative to the fried mozzarella sticks.

Mike's Mushroom Bread

Excellent! I made the recipe almost exactly as written. I only substituted thinly sliced onion for the green onion since I had no green onion. This is a keeper! My husband and I had this for dinner with a salad. We have leftovers for another meal.

Joe's General Tso's Chicken

The recipe appealed to me because I had all the ingredients on hand. It tastes OK, but it wasn't what I was expecting. It does not taste like General Tso's at all, and I've made better generic stir-fry sauces. It is not bad, but I don't like it enough to make this one again.

Feta and Bacon Pasta Sauce

I did not use the butter, but only the drippings from the bacon. I used only 2Tbs of flour to reduce the thickness of the sauce, based on other reviews. With this change, I thought the sauce was a perfect thickness. My family would prefer less cheese, so I will reduce the amount next time. I agree that this recipe is not pretty, but it tastes great. We had it over penne. This is a very quick and easy meal, and gives me more ways to use up the various homemade cheeses I make. Thanks for sharing!

Tangy Honey Glazed Ham

I followed the recipe exactly except for one minor change. I used the whole orange, peel and juice, instead of just 1/3 of it. The glaze was easy to make and delicious! The ham was perfectly moist baked exactly according to directions. Thanks for sharing!

Pesto

I like the flavor of this pesto. I think I over-packed my basil because the paste was very thick and I needed to add a little more olive oil to make it the consistency I wanted. I did cut down slightly on the garlic and P. cheese like other reviewers suggested, and I added a pinch of sea salt. I did not have pine nuts - too expensive. I used walnuts instead (chopped and toasted.) The flavor was very good. Thanks for sharing!

Carolina Fish Cakes

These were good, and the whole family enjoyed them. I substited Scup for Cod because that's what I had available (any white fish would work well in this recipe.) The texture was very good. The cakes were firm and moist, but not sticky. I baked them in the oven, and they held together very well. The only thing I did which wasn't mentioned in the recipe is that I sprayed the cakes with cooking spray before baking, and then I sprayed them again when I turned them over. I think this helped to give a slightly crispy outside. I would like a little bit more spice, so I might try the Cajun seasoning suggestion next time.

Pumpkin Bread Pudding with Caramel Rum Sauce

This is a great recipe. I used banana bread instead of pumpkin bread because I had a partial loaf that was starting to get stale. The bread had nuts in it, which gave the perfect little crunch in contrast to the softness of the pudding. Since my bread was plain, I added just a smidge of cinnamon and nutmeg to the milk/egg mixture. I also cut down the sugar by half because bananas are so sweet already. My husband and I both loved this recipe. It is a great way to use up some leftover bread. I can't wait to try it with some pumpkin bread!

Rhubarb Strawberry Crunch

This dessert is easy and delicious! I made no changes at all, except that I halved the ingredients because I didn't have enough rhubarb and strawberries for the whole recipe. Everyone loved this dessert. I don't think I will make strawberry-rhubarb pie ever again because this was so much more tasty and easy to make than pie. Thanks for sharing!!!!

Bread Pudding II

This bread pudding is delicious! 5 kids and 2 adults tried it, and we all LOVED it! We had a little whipped cream on top (I left out the pecans.) Tonight, I am trying it with some blueberries. Thanks for sharing this!!!!

Buttery Spritz Cookies

I would give these a 3-1/2 if I could. The texture of these cookies is incredible. The dough was pleasingly stiff - stiff enough to make a sturdy cookie, but not too stiff to make it difficult to work with. The cookies have just the right tenderness when baked. However, I found the flavor a bit off. The butter taste was overwhelming. I think it needs some more almond extract.

Frosted Cinnamon Zucchini Bars

I liked the flavor and texture, but I did not care for the frosting too much. I used both the coconut and walnuts. I did add 1 tsp of cinnamon to the batter, and it was good. But, with the cinnamon frosting, it was a little too much. I thought the texture was excellent. It reminded me of carrot cake. I do think it is a bit too moist to call these "bars". I made the recipe in the specified pan size, but next time I will use round cake pans or a 9x13 pan to make a cake. Using the same ingredients (flour, eggs, amount of zucchini, etc.), I think I will spice it like a spice cake and use a cream cheese frosting.

Not Your Every Day Smoked Pork Spare Ribs

These ribs were very tasty and enjoyed by all. I left out the jalapeno and cayenne in the rub because I was cooking for people who can't handle any spice. I put only 2 tsp of hot pepper sauce in the mop sauce. The flavor was still very good, but if I was making it again for just my famil, I would definitely put the cayenne in (though maybe not the jalapeno.) The recipe was easy to follow, and my husband had great success on the grill, even though he had no experience smoking anything. Thanks for sharing!

Kate's Light n' Fluffy Buttermilk and Chocolate Chip Waffles

These waffles are definitely light and tasty. I made them without chocolate chips, but I hadn't noticed that the recipe did not contain sugar. Without the chocolate chips, you definitely need to add a tablespoon or two of sugar to the batter. This recipe is a good versatile recipe. I think you could leave it plain for a savory waffle, or add some herbs instead of the chocolate chips. For a sweet waffle, I recommend putting in some sugar. I imagine you use any kind of add-ins or toppings that you want with this basic recipe. Thanks for sharing!

Glazed Almonds

These almonds were very simple and tasty. Watch out for the butter/sugar mixture. It browned much faster than I expected, and I ended up burning it a little. The almonds still tasted good, though. The little bit of salt at the end is a perfect touch. I used these on salad.

Rosie's Bok Choy Salad

I made this salad tonight. It was incredible! My husband said it was the best salad he's had in a long time. I didn't have any ramen noodles or chow mein noodles on hand, so I used a can of sliced water chestnuts for the crunch - this cuts down the fat some, too. The dressing was fabulous. I will definitely be making this again with so much bok choy coming out of my garden. Thanks so much for sharing!

Fudgy Brownies I

Normally, I like extremely fudgy brownies, but this recipe may well change my mind. These brownies were the perfect balance between fudgy and cakey and would please anyone. I used 1-1/2 cups sugar because I ran out at that point, and they were the perfect sweetness for me (I like a little less sweet.) They were good slightly warm, and even better the next day! I had no problems at all with them being too crumbly or hard to cut. Wonderful recipe! Thanks!

Oatmeal Waffles

I don't know why, but these turned out terrible. I was looking forward to the high fiber in this recipe. The texture did seem to come out OK, but the taste was terrible. Again, I don't know why. I think I might try again with the honey and cinnamon that other reviewers used.

Baked Mango-Ginger Swordfish

This recipe is terrible. I love sherry, and I love mango chutney, but the two just do not go together. I mixed up the marinade and tasted it to see if there was enough ginger. Thankfully, I had not put the fish in it yet. I didn't ruin the fish, but I ruined a jar of my homemade mango chutney.
