Wow! I was hopeful, and assured by the number of positive reviews, but still a little doubtful until the roast came out of my oven. Beautifully blackened on the top and tender medium rare through the middle. This recipe delivers exactly what it promises, and with a very inexpensive cut of meat! I made this for the protein portion of a wine-focused dinner with friends, and so, seasoned only with salt and pepper. The taste of the meat was excellent, and there was just enough fat (i did not trim any away before cooking) to balance out the tannins from a couple of big reds that showed. Thanks so very much for a great recipe.
