Colleen's Slow Cooker Jambalaya

Very good. I used brown rice and a sweet mango sausage. It was a nice surprise among all the spices. I will have to work at tweeking the spices to my liking though. Definitely worthy of a second try!

Darra's Famous Tuna Waldorf Salad Sandwich Filling

Really great! I did use chicken instead, since I preferred that with the other ingredients. I omitted the pickle relish, used cashews instead of walnuts, and diced up a fuji apple tossed with a Tblspn. of lemon juice. Also I used green onion instead of a shallot. It can out just fine.

White Chocolate and Cranberry Cookies

I used 1/4 cup butter and 1/4 cup applesauce to cut the fat. The texture was moist and delicious. I also prefer semi-sweet chocolate chips and I tossed in about 3/4 cup of pecans. I also added a few Tblsps. more flour. They were VERY good!

Tomato and Pepper Salad

Chicken Dijon

The sauce on this is super delicious. I felt like a French chef! A little lemon pepper and dried basal brightened it up in a lovely way for even more flavor.

Country Apple Dumplings

To die for!! To make these more figure friendly, I use low fat crescent rolls, diet mountain dew and Somersweet instead of sugar. (Somersweet is a delicious product put out by Suzanne Somers that I often bake with. It is virtually calorie free, natural and bakes well.) I also like to dice up the apples.

Salmon Stew (Abalos Style)

This is easy, delicious and versatile. I did make a few changes however. I used 2 cups chicken broth and 1/2 cup of water in place of the water, to add more flavor. I also used a can of sliced tomatoes and broke them up a bit. I also added 2 stalks of celery and 3 slender carrots to the garlic and onion. The last 5 minutes I threw in 2 cups of chopped fresh spinach. Also, one 6 oz. can of salmon was enough for my taste. This can go in an Italian or Asian direction depending on how you season it. I will make it again. (Fresh salmon and basil would really knock it out of the park.)
