Brussels Sprouts Stir Fry

Brussels Sprouts, most people love them or hate them. This is a great way to get them in and change someone's mind. I did ad some garlic, but that is just because I love garlic.

Anaheim Fish Tacos

Was a great taco, I would say to have some cabage ready for those die hard Latinos that want that with their fish taco. Also I had to double up on the fish because it will shrink, Im not real sure what use the Chicken broth has, the fish will produce so much water it isn't really needed.

Coconut Rice with Black Beans

Yes, it can be bland, but coconut milk can be like that. I added; 4 minced cloves of garlic, 2 tsp of low sodium Chicken broth powder, 4 whole dried red peppers. It all worked out. You know not to mess with the rice after it starts to boil, and after let it cool so it won't be sticky or to moist. Served with thin sliced Chicken and sautéed veggies in a light lemon pepper marinade. Good stuff Kim.

Thai Cashew Chicken

Yes, it is to salty, I would tell you to only use fish stalk with a TB or 2 of Rice Vinegar. Drop the soy. One TB of Sesame Oil and Brown Sugar is enough to create a glaze. You don't need the peanut butter. The trick to this is your green veggies, I would tell you to add nice green celery and green and red pepper to counter the other. Also, pound your chicken thin before marinating.

Middle Eastern Rice with Black Beans and Chickpeas

Great flavor, you will think that all the spice in the rice is going to be crazy. After you mix, it all makes sense. I would recommend that you add the cilantro and parsley, it gives it a very nice edge. The chicken broth has enough salt, so you won't need to add any. If you have the spice's, it is an inexpensive meal to make. I will make this often. Thank you Juliep - Good stuff...

Vegetarian Moroccan Stew

I like it, nice clean taste, but I have to say there is something missing. Maybe add some tomato paste, or some other personal tweak. I bet you could sub the Butter Nut Squash with Sweet Potato. To get all the ingredients was a little expensive. I'm going to give it a shot again one of these days.

This is a great dish, lots of flavor and the white kidney bean is a natural starch carb blocker. I would advise that you follow the measurements and avoid “eyeballing” it.
