About this Cook
A correctional officer and mother of 5. Love to cook, especially when I don't have to clean up!
My favorite things to cook
Too many to list. Love steak, shrimp, pastas, veggies, as I said, too much too list.
My favorite family cooking traditions
Just big huge home style meals, with simple home cooked food. Learned a lot from my grandma, and I prefer natural ingredients, over throwing together a bunch of processed stuff thrown together.
My cooking triumphs
So many things have come out so good, what to choose? My latest creation was a whole wheat pasta with a mix of shrimp, asparagus, fire roasted tomatoes, roasted red peppers, and onions in a garlic sauce.
My cooking tragedies
Ummm...I think the worst thing I ever made was a hot dog sauce. I used a recipe off this site and didn't read the reviews. For one batch it called for 2 TABLESPOONS of celery seed. It tasted horrible. We had friends over for a big football game on tv, and the sauce was so horrible no one would eat it. (You know it is bad when a bunch of guys drinking beer won't touch it.)I started over with another recipe, and put it on the table with chopped onions, cucumbers, slaw and jalapenos. Those dogs disappeared then!

Ground Beef Curly Noodle
I love how easy this is. When I put it down in front of my 4 year old, all I heard was, Mom! I hate this!! After arguing for 10 minutes, crying and pouting, he finally tried one tiny bite. Then all of a sudden he says, "Oh, I like this." And he proceeded to finish the whole bowl. My husband added cheese to his, and said it was great.

Stuffed Jalapeno Firecrackers
I make this frequently. The big difference with mine is that I brown a pound of sausage, drain and mix with the cream cheese. It is amazing. Sometimes I will sprinkle cheese on after they are done. Not diet friendly, but it is really good. I have also wanted to make it and been really short on time, so I put the cream cheese and sausage mix in, layer on the peppers, (you can use any peppers, not just jalapenos. My brother in law likes them with goat horn peppers, my husband like pablano and a guy I work with changed it to bell peppers.) Then layer baco on top and bake at 350 for about 30 to 45 minutes, when bacon is done.

Easiest, Amazing Guacamole
This was pretty tasty. It is not a guacamole I would want with chips, I like peppers and onion and tomato in that, but this is a very nice guacamole for sandwiches! Put some on my turkey bacon sub and it was quite yummy!
