Tortellini Soup I

This soup is absolutely delicious. I love it! I used a bit more beef broth just to make it more brothy and I used fresh basil instead of dried basil but otherwise I followed the recipe to a T and is is great. Full of flavor and depth - very hearty and satisfying. I will definitely make this again!

Spicy Garlic Lime Chicken

Definitely yummy and I didn't have to go out and buy anything - all of these ingredients were on my spice rack so it didn't require a trip to the grocery store. Definitely makes a spicy chicken dish but not hard to make at all. I will say that I only used two chicken breast halves for the amount of spice recommended and it was the right amount so I think that you would have to increase it for the quantity of chicken recommended in the recipe. Also, I substituted fresh minced garlic for garlic powder. Instead of using garlic powder at the end I just added another tablespoon of lime juice. Tasty and spicy!

Ten Minute Szechuan Chicken

This was a great recipe. I added a bunch of veggies to it: broccoli, carrots, bell pepper and mushrooms. Tasted great and fresh. Thanks very much!

Bean Quesadillas

This was really good but like a lot of people I did modify the recipe because it was a little bit simple. I added diced jalapeno peppers to the mixture and tossed in a bit of seasoning: cayenne pepper, paprika, and cumin added quite a bit of flavor. It was hard to flip the flour tortilla, though.

This was tasty but I felt like there was something missing. I added a splash of cream to thicken it up but that didn't change it too much. I diced up a half an onion and put it in - it tasted nice but it didn't blow my mind.

This is a great, simple, tasty chicken recipe. If you want to just throw a chicken dish together in a half hour when you don't have many ingredients on hand, this is a great choice because it utilizes ingredients everyone has around the house. I accompanied it with broccoli and a sweet potato. Yum!

Beth's Spicy Oatmeal Raisin Cookies

Definitely a tasty cookie. I will say that they do not spread at all so if you want a flatter cookie you will need to flatten them. I added a dash of pumpkin pie spice and substituted applesauce for the non butter shortening. I cooked mine for twelve minutes at 350 until the tips of the cookies were starting to brown. They are more of a crunchy cookie and less of a moist cookie. Tasty.

Indian Chicken Curry II

This is a really good curry dish. I followed the recipe making only a couple of very slight modifications: (1) I toasted the curry powder and paprika in a dry bowl before putting it in the oil; (2) I chopped up a red bell pepper and a threw in a 1/2 cup of frozen peas just to increase the amount of veggies in the dish. It tasted great and my boyfriend really liked it too. I served over basmati rice. Yum.

Beets with Onion and Cumin

Loved this recipe. I am a big fan of beets: they taste great and are high in vitamins and minerals. I didn't bother skinning or de-seeding the tomatoes and it turned out great. The tomatoes just dissolved into the dish. I toasted the cumin seeds before cooking and I think that added to the flavor. I just thought this dish tasted great. I will use again.

Chicken Massaman Curry

I did not care for this recipe. I just think the flavor of tamarind was way too strong. The unfortunate thing about recipes is that pastes and sauces can vary widely in terms of concentration. So this recipe calls for 3 tablespoons of tamarind paste. I used one tablespoon and the flavor completely overwhelmed the rest of the dish. Maybe my paste was more concentrated than other pastes. I will not be making this recipe again.

Chicken In Basil Cream

Fabulous recipe. I only made very slight modifications. I cut the chicken breasts into thirds and then breaded and cooked them in butter. I used slightly more cream than recommended. But if you thicken the sauce enough it comes out wonderfully. I served it over penne pasta. Yum!

Roasted Beets 'n' Sweets

This is delicious. Be sure to roast the beets for fifteen minutes before adding the yams as beets take a long time. I used fresh minced garlic instead of garlic powder (fresh always being preferable in my opinion). But the yams, beets, and onions go together excellently.

Hazelnut Chicken

I liked this recipe. It creates a very hazelnutty flavor. I think that a little flavor could be added by adding something to the bread crumb mixture. Maybe poultry seasoning or lemon pepper or paprika. I'm not sure. As it is, you definitely get a chicken dish that tastes strongly of hazelnut.

Thai Ginger Chicken (Gai Pad King)

Loved this dish. I did change just a couple of things: (1) for vegetables I used one red bell pepper, one yellow bell pepper, snow peas, green onions, and mushrooms; (2) I used extra oyster sauce instead of fish sauce; (3) I did not use extra salt; (4) I cooked the rice separately; (5) I reduced the fresh ginger substantially - ginger is not a subtle flavor and would be too strong if one really used 1/2 a cup. Thanks for the recipe!

Grilled Gorgonzola-Basil Burgers

Wow, this makes a delicious burger. I highly recommend this recipe. I used organic extra lean ground beef and accompanied the dish with sweet potato fries. I also put grilled onions and microgreens on the burger bun. Thanks for the recipe! Easy and delicious.

Aunt Anne's Coffee Cake

I really enjoyed this recipe. The great thing about it was that I threw it together in about five minutes time with ingredients that I had in my kitchen. So it's very easy. I creamed together the sugar and butter the way I would if I was making cookies. Also, I used brown sugar for the topping and added a bit of oats to the topping. I made 1 and 1/2 times the recipe quantity and it fit perfectly into a 9 x 13 inch dish.

Delicate Jasmine Rice

This was a really nice recipe. It is hard to decide how to rate the recipe because it really only adds a very subtle jasmine flavor. But I thought it was fun to mix it up from the typical water and rice cooker dish. I used this in a Thai cashew chicken dish. My only problem with rice in cooking is the quantity of liquid v. rice to use. This was about right. Thanks for the recipe.
