I am always looking for way to use foods like spinach and kale. This was good, you can use two great healthy foods, chicken breast and spinach, but the curry adds a lot of flavor.

Meatball Nirvana

I've made these several times and they are delicious. They go so fast. I am on a high protein diet so I'm always looking for dishes to cook with meat and no refined carbs (i.e. pasta, rice, bread). I did not use milk. Instead, I used eggs to moisten the mixture. Also, I try not to use dried herbs. Instead, I threw in fresh parsley, basil, and oregano from the farmer's market. These are amazing meatballs - I will use these forever.

Easy Broccoli Quiche

This was amazing. Completely delicious. I also cooked some apple cured bacon and then crumbled it up and added it in to the mix. I cooked the quiche for more than an hour, though, so you may need to cook longer than specified in the recipe. But it was so tasty and was very healthy, I think. I ate it for three days after I cooked it.

Balsamic Bruschetta

This was awesome. I made it just as specified with a little less cheese and with fresh basil from the farmer's market. I also sliced up a persian cucumber to put a little more green in it. I sliced and toasted up a sourdough boule and gosh it was delicious. I'm sure it's really healthy too.

Italian Sausage Soup

Tasty and extremely easy. I used spicy Italian sausage and managed to throw this together in about ten minutes. Very flavorful and so easy a child could make it. Thank you!

Rhubarb and Strawberry Pie

I love the flavor of the filling but it's just a little runny. I used three cups of strawberries and three cups of fresh rhubarb. I cooked the rhubarb in about 1/4 cup of water and let it simmer and then added a half a cup of sugar. I then added the strawberries and simmered for another five minutes. I then put it in the pie crust and baked for 40 minutes. I would probably cook another five minutes if I were to do it again and also add a bit of cornstarch to thicken it. But the flavor of fresh rhubarb and strawberries is just unbelievably delicious.

Strawberry Cobbler II

Delicious - I used five cups fresh strawberries, omitted the water entirely, decreased the cornstarch to a little over a teaspoon, and only slightly increased the quantity of flour. It fit perfectly in an 8 x 8 inch baking dish. For those who say it's too cakey, they should reduce the baking powder to 1 teaspoon. It makes it more crumbly. With these modifications, the cobbler yielded the perfect consistency. Not soupy at all. Thanks for the recipe!

Salmon with Lemon and Dill

This is delicious. Dill and salmon are a natural combination. I covered the dish in aluminum and baked for 30 minutes. Also, instead of using garlic powder I used fresh minced garlic.

Baked Beans II

Mmmm, really delicious. I've never really done anything to baked beans before but this really added to them. I cooked the bacon and then removed it and poured out the grease. I then carmelized the onions in the same pan (just a hint of bacon grease in the skillet). Then I added the bacon, beans, ketchup and mustard. I know it seems weird to add ketchup and mustard but it tastes great. I only added about a tablespoon of brown sugar and it was plenty sweet.

Sopa De Lima (Mexican Lime Soup)

I like the flavor of this soup alot. I sauteed the onion, garlic and chicken together before adding it to the chicken stock. I know you're thinking it's too much lime but it's not - the flavor comes out really good. Make sure you use plenty of fresh cilantro - it's essential. This soup tastes really fresh with a little bit of a kick. I will make it again.

Baked Salmon II

Completely delicious. I will definitely be using this again. It is easy and results in incredible flavor. Instead of placing them in aluminum foil, I placed the fillets in an 8 x 8 baking dish and covered the baking dish with aluminum foil. Wonderful thank you for the recipe.

Alyson's Broccoli Salad

Outstanding! I made this with red grapes sliced in half instead of raisins and I'm sure that it improves the dish. I also used pine nuts instead of sunflower seeds which worked very well. I used low fat organic mayonnaise. Delicious, delicious, delicious.

Sweet Corn Tomalito

I loved this. Tastes very authentic. Like most people I cooked it in the microwave - 7 minutes at 30% and another four minutes at full blast. Came out absolutely delicious. I will definitely make this again, especially if I'm going for an all-Mexican meal. Thanks!

Pesto Cheesy Chicken Rolls

I like that this recipe creates a different looking type of chicken dish. But I will say I cooked for 45 minutes and it came out a bit dry. So maybe only should be cooked for 30 minutes or so. Still, interesting flavors.
