Blueberry Zucchini Muffins

LOVE THIS! The first time I made these I followed the recipe completely and enjoyed them. So a few days later I made them again changing them just a little and the results were AMAZING!!! I cut the white sugar back using 1/4 cup, added 1/4 tsp of nutmeg, added 1/4 cup of honey, used applesauce in place of oil and used Greek yogurt in place of milk. Lastly, I did squeeze the shredded zucchini between paper towels to get rid of the water so that the muffins would not be too wet.

Slow Cooker Mashed Potatoes

Delicious for our Thanksgiving meal and so nice to make ahead! I used 10 pounds of Russet Potatoes. Followed the recipe part of the way, however, I cut out lots of unwanted fat grams. The garlic and broth makes a wonderful flavor. I did use one can of reduced soduim chicken broth instead of the 3 cubes. (When potatoes are ready for draining... SAVE the water flavor for your gravy. It really adds a nice taste.) I beat the potatoes with only 2 cups of reduced sour cream and flavored with salt and pepper. Refrigerated overnight, the next day I warmed them slightly in the microwave, and placed in a crock pot on low stirring them once in a while. Using a terry cloth towel between potatoes and lid does help keep the water drippings off the potatoes when lifting up the lid as someone else suggested. Add your gravy to the potatoes and you have one awesome tasting side dish!!! This recipe is a keeper.

Sauteed Apples

Family LOVED these APPLES! I sort of followed the recipe, however; I used a mix of Gala, Granny Smith, and Honey Crisp Apples using 6 apples in total. I only used a 1/4 cup of water and a 1/4 cup of brown sugar. Lastly, I added 1/8+ tsp of Nutmeg. This made for a perfect dish that everyone enjoyed! This will be a new forever recipe! Thanks for sharing!!!

Karen's Slow Cooker Chicken Fajitas

Good and easy recipe. I followed the recipe, however, used another reviewer's suggestion for using the Allrecipes Fajita Mix. Yes, this is convenient when you have a busy day, BUT I will stick to the old fashion way of making fajitas, they just taste so much better especially the freshness of the veggies and the texture is more of what I am used too (just saying).

Herb Roasted Pork

So moist, juicy, delicious and easy to make! My pork loin was small, and I baked it for 1 hour. For sugar I used brown sugar and the vinegar was apple vinegar. Great recipe, my family loved it!

Black Bean and Salsa Soup

Excellent and very easy! I followed the recipe but added 1/2 cup of corn (not pureed) and a clove of crushed garlic. I did not have veg. broth on hand so I used chicken broth low sodium. I kept a 1/3 of the beans whole as others recommended. Lastly, instead of topping my soup with the green onions, I cooked them into the soup mix. YUMMY!!! I may add a 1/4 cup of rice to this the next time. This is a new keeper and one that will be used often!!! Thanks!

Easy Ice Cream Cake

So Good!!! This was super easy and was a huge hit for our family gathering. I added crushed mint Oreos in the middle. Special request were made for this to be a holiday dessert with crushed peppermints. I also think that a dot of red food coloring mixed in the whipped cream for the middle layer would make a nice appearance for Christmas!

Banana Crumb Muffins

Very moist and yummy! I substituted the butter with 4 TBSP of apple sauce and 1 TBSP of oil for a healthier diet. I also added 1/2 tsp of cinnamon to the batter mix for more spice flavor. Lastly, I shredded up a small apple as another person suggested. The recipe made 12 large muffins that taste wonderful. My family truly enjoyed these. This is a keeper!!!

Healthy Banana Cookies

Not your real cookie but good for a change. I used other reviewers ideas to sweeten things up a bit. I used 3 cups of oats, 1/2 apple sauce 1/2 oil, 1/4 cup of brown sugar and used chocolate chips instead of dates. Nuts would also add a good flavor for the future. I like this recipe overall especially for those who are having to watch their sugar intake.

Crumb-Coated Chicken Thighs

I used chicken breast instead of thighs. Family did not like this recipe at all. I think it may have been the chili seasoning. We usually enjoy new foods and different taste. I will not be making this again.

Oven Pot Roast

Loved the taste! The roast was delicious. This meal was served to 7 of us ages 81 to 13. Huge hit for all. This was easy to make ahead and bake later. I used white wine instead of vermouth. Fantastic!

Baked Spaghetti

Family of 4 wasn't too impressed with this recipe. I used racotta cheese in place of cottage cheese. Added more sauce, garlic and basil to this dish. After purchasing all the ingredients I should have just made good old Lasagna!

Beef and Parmesan Pasta

I love most recipes but no one in my family would eat this one! I did try to use other's recommendations by adding onion, pepper and a small amount of basil. This recipe did not have much flavor. Unfortunately, I wasted a lot of good ingredients.
