Blueberry Zucchini Muffins
LOVE THIS! The first time I made these I followed the recipe completely and enjoyed them. So a few days later I made them again changing them just a little and the results were AMAZING!!! I cut the white sugar back using 1/4 cup, added 1/4 tsp of nutmeg, added 1/4 cup of honey, used applesauce in place of oil and used Greek yogurt in place of milk. Lastly, I did squeeze the shredded zucchini between paper towels to get rid of the water so that the muffins would not be too wet.

Slow Cooker Mashed Potatoes
Delicious for our Thanksgiving meal and so nice to make ahead! I used 10 pounds of Russet Potatoes. Followed the recipe part of the way, however, I cut out lots of unwanted fat grams. The garlic and broth makes a wonderful flavor. I did use one can of reduced soduim chicken broth instead of the 3 cubes. (When potatoes are ready for draining... SAVE the water flavor for your gravy. It really adds a nice taste.) I beat the potatoes with only 2 cups of reduced sour cream and flavored with salt and pepper. Refrigerated overnight, the next day I warmed them slightly in the microwave, and placed in a crock pot on low stirring them once in a while. Using a terry cloth towel between potatoes and lid does help keep the water drippings off the potatoes when lifting up the lid as someone else suggested. Add your gravy to the potatoes and you have one awesome tasting side dish!!! This recipe is a keeper.

Sauteed Apples
Family LOVED these APPLES! I sort of followed the recipe, however; I used a mix of Gala, Granny Smith, and Honey Crisp Apples using 6 apples in total. I only used a 1/4 cup of water and a 1/4 cup of brown sugar. Lastly, I added 1/8+ tsp of Nutmeg. This made for a perfect dish that everyone enjoyed! This will be a new forever recipe! Thanks for sharing!!!
