I had my doubts as I was putting it together but it was DELICIOUS. Thank you for a 5-star keeper.

Stuffed Zucchini

Reviewed: Aug. 1, 2012
I cooked meat first to get some of the fat drained off and I probably used 2x the amount of mozz - I just throw it on until if feels right. Absolutely DELICIOUS! A keeper for sure. Zucchini about size of a cucumber (about 1.5" in diameter and 8" long) and cooked just fine.

Creamy Shrimp and Rice

Reviewed: May 4, 2011
Made just as described. It is a beautiful dish but the flavor did not quite do it for us - probably will not make again. It was the fiirst time I had tried the cooking creme. Tasted too much like cream cheese with not enough garlic flavor. Also, make sure to take the tough ends of the peas along with the "strings".

Ice Cream Snowball Pie

Reviewed: Jan. 18, 2010
Very good. I solved the hard crust issue by placing the pie plate in a pan of hot water before cutting - (like loosening a jello mold). I made with 2 flavors - 1/2 with my favorite flavor and 1/2 with my husbands favorite flavor. We were both happy!

Asparagus Cashew Rice Pilaf

Cut in half for 2 and just a little left over - so serves 8 small portions. Pretty good but not out-of-this-world! Nice change.

The best. Loved, loved, loved it. Thanks! I served over angel hair pasta and no way it would have fed 4. The 2 of us ate almost all of it. Don't tell.

Chicken Breasts in Caper Cream Sauce

Very yummy. I only had 3 breasts and was afraid it would be too salty but it was just fine. Of course cooking in butter makes everything delicous.

Super easy and super good! I used 1.25lbs of salmon and an 8 oz. box of mushrooms. Everything else was the same. A keeper for sure.

Green Bean Supreme

Very good, very rich - used less cheese (no way I was using 3 cups), more beans, less salt. Will make again. BTW - not runny at all.

Easy Mexican Casserole

Reviewed: Aug. 15, 2012
Made exactly as specified. Easy and yummy. Used chili beans with a spicy sauce so maybe that jazzed it up a bit. Not sure how healthy is it with the 2 cups each of cheese and sour cream - maybe that is why it was so tasty. I did drain the fat off the meat before adding the salsa and beans - that is worth something.

Peppered Shrimp Alfredo

Way too hot even at 1/2 tsp cayenne pepper. I will make again but use 1/4 tsp. Should be perfect with that change. You folks out there must have tough taste buds. We were sweating.

Blackened Shrimp Stroganoff

A little bit too spicey for us but that is easily fixed next time. I just kept adding stuff to the mushroom mixture and added cooked shrimp at the end. Yummy!!!
