Honey Roasted Carrots

Used 1 lb of carrots and peeled and cut into carrot sticks and cooked 45 minutes. The sauce was very liquidy so not sure why others had issues with a hard-to-clean pan. Probably could have used more carrots for the amount of sauce but very good and will make again. When I asked my husband if it was a keeper he said "OH MY GOSH, YES".

Best Ever Sausage with Peppers, Onions, and Beer!

Linguine with Asparagus, Bacon, and Arugula

Followed several suggestions and added chopped chicken (1 lb) and mushrooms (8oz) and replaced arugula with baby spinach (about 1 oz). It was very good. As other say the lemon juice makes it taste very fresh.

Apple Glazed Pork Tenderloin

Delicious and super easy. I used 1.5 pork tenderloin and peeled the apple. There was a lot of sauce and it was rather thin but it surprisingly got all eaten. Served with mashed potatoes.

Pizza Casserole

It was good - pretty basic. Easy and similar to other recipes I've made. I used a box of tri-colored rotini, 2 jars of pizza sauce (they are now 14oz), green pepper, onion, garlic, mushrooms, and black olives (stuff I like on a pizza). I followed someone elses suggestion and used half beef/ half sausage. Probably will not make again but keep looking for other recipes. I was trying to use up a package of pepperoni and this worked for that purpose.

Carrots Au Gratin

Cut the recipe in half (note that qty in directions do not get altered). Very good. Two of us ate almost the whole casserole. It is a nice change from green veggies.

Caper Baked Chicken

Very easy and surprisingly good. For a dinner for 2 I bought 3 large breast halves, cut each in half and pounded slightly. Had 1 piece left over. The meat was swimming in sauce so no issues with dryness at all. Used sauce on mashed potatoes. All very yummy. Will make again. Oh yes, made in metal baking pan with no cover.

Debdoozie's Blue Ribbon Chili

Good and easy. Note, it is chili seasoning (1 packet is 4 TBS)and not powder. It looks like a lot of the folks that did not like used chili powder by mistake. We liked it - it was not too spicy for us and we usually order thai food with the lowest rating. A bit too many beans for us.

Marinated Green Beans with Olives, Tomatoes, and Feta

I loved this but my husband did not. He said the beans were too tough. I love them crispy and he loves all his veggies wilted (too bad). Very fresh tasting. I halved the recipe and made as is. Very yummy!

Beef Stroganoff III

Very good. I halved the recipe. Used 1 lb of sirloin and 8 oz fresh mushroom. I used a trick I learned a long time ago - freeze the meat slightly before slicing - makes much easier to cut. Not much left over after the 2 of us were done!!! :)
