Black Magic Cake

Fantastic cake! Simple yet delicious! I made this for a big group of friends and loaded it up with some chocolate chip/butter/powdered sugar icing and it was perfect! We were calling it pudding cake it was so moist! Thanks for the great recipe, I will be keeping this for years and years!

Vegetable Soup I

This was delicious! I am not a veggie fan but I loved this soup. I made it as the recipes calls however I did add some Zucchini, and Worcestershire sauce. We had a group coming over to our house and so the soup ended up simmering for about 4 hours by accident. I didn’t mind though because the consistency was perfect! The liquid had a hearty thickness to it. My husband, being the carnivore that he is, was surprised that I wasn’t putting any meat in it; however, I thought that the beef broth added plenty of flavor, next time we will try adding some beef. Following other recommendations I added marjoram, parsly, oregano, thyme, and basil. My husband did sneak in a cup or so of brown rice when I wasn’t looking, which made it more substantial for a hearty dinner. I love how healthy this recipe is, how it is simple but has amazing flavor. We will definitely be making this again!

Easter Leftovers Casserole

I made this on a whim as I had some leftover mashed potatoes and ham from Easter dinner. It was delicious! I don't have any garlic powder (and sadly forgot to put real garlic in) but I did chop up about a quarter of an onion and throw that in there. The suggestion to add broccoli was perfect since the broccoli was perfectly cooked. I threw in a handful of frozen corn which also added great flavor. After the cheese melted on the top of the casserole I put the oven on broil until a nice crunchy layer of cheese formed. We had some friends over for a quick meal and everyone loved it. Even the two toddlers we eating it. I will definitely be making this again.

Pesto Quinoa

This was good and simple. I made enough for about 5 people and added 3 grilled chicken breasts. I also added some parmesan cheese and used canned diced tomatoes instead of fresh! Everyone liked it and some even asked for the recipe. I think next time I will make this with some spice to it!

Quick Country Cupboard Soup

I was looking for a quick, tasty recipe to use up the ingredients that I already had, and I found this recipe to be so-so. After cookie the meat I put the soup in my slow cooker because we were going to eat it for a late lunch. At noon, when it had been cooking for 4 hours or so, the potatoes tasted awful, and the soup overall lacked flavor. I whipped out the spices, added more garlic, and eventually added some white wine into it. When my husband tasted it at noon, he didn’t really like it but at 10pm that night when we got home from a party we both agreed it was much better. I didn’t really like the italian seasoning in it, but I did add some cayenne pepper to give it some extra spice. I would make this again, but not without my alterations.

Spicy Sweet Potato and Coconut Soup

While this recipe was extremely flavorful, I am only giving it 3 stars because the flavor was not particularly appealing to me. My husband tasted it and was surprised by the "intense" coconut flavor while I felt that the lemon and ginger were overpowering. I felt that there were too many strong conflicting flavors. I followed the advise on someone else's comment and pureed the sweet potatoes, a step I regretted as it turned the soup into a very very liquidy substance. I allowed it to simmer for about 2 hours which changed the soup into a more desirable consistency. I also added an extra teaspoon of curry paste because we like spice, which even that extra curry did not make it much spicier. It was beautiful with the sesame oil and cilantro in it when served! And I also did not have vegetable broth on hand and thus used chicken broth, which we could not taste in the soup so I don't think it made much of a difference. While my husband and I both ate the soup for dinner, we will not be making this soup again.
