The Best Fresh Tomato Salsa

This is a very simple, easy, go-to fresh salsa recipe that is sure to taste good if you use fresh ingredients. Mine tasted great with almost all veggies from the garden. I eyeballed everything except the tomatoes (because I used cherry tomatoes and it was a little hard to tell how much I had). But seriously, just dump it all in a bowl and add ingredients until it looks right. It will taste fabulous! A note for those interested in canning, I think you might want something where you peel and boil the tomatoes, as most canning recipes for salsa that I've come across use that method.

Curried Cashew, Pear, and Grape Salad

This was a very nice salad, but I wouldn't slice the pears too thinly. They got a little soggy in my salad. I didn't slice the grapes. The fresh rosemary probably could have been substituted for dry to make one less item from the store. Otherwise, a fine blend of tastes for my dinner party.

Black Bean Chili

Eh. It was ok. People ate it. It was a LOT of veggie chopping for a pretty mushroomy chili in my opinion. I did use veggie broth instead of chicken, so that might have taken a little away from the taste.

Cracked Sugar Cookies I

This recipe is impossible to screw up. I made them by hand, halved the recipe, used powder instead of tartar (even put a little too much in!), made pretty large dough balls and added a little lemon extract and some lavender flowers. You would think that they would come out a total failure, but low and behold, 10 minutes in the oven at 350 and they taste like lemony, lavendery sugar cookies with chewy centers and cracked tops. Incredible.

Make-Ahead Turkey Gravy

This turkey gravy is probably too much work for a smaller get together, but when I had 20 people for turkey dinner this gravy was essential! I changed it a little. I used 3 turkey legs, did them in the oven, let them stew a while with the veggies in the crock pot with the majority of the chicken broth. There wasn't a lot of fat on the top when I took the solids out, so I just spooned about half or more of the liquid (including fat) into a pan on the stove and did the flour bit like regular gravy. Then I put this mix in with the rest of the broth, stirred and voila. All in all I ended up with a ton of perfect gravy that heated up the next day just fine. It was pretty hard to mess up, which I can't say about day-of gravy.

Southern Candied Sweet Potatoes

Did them mostly in the skillet and then tossed them in the oven to finish. Had to hurry them, so they weren't super soft. Added a splash of bourbon (just for fun). My favorite comment? "I love the carrots!" ....(me) "They're sweet potatoes"...(him) "I HATE sweet potatoes though!" They were a hit!

Cranberry, Sausage and Apple Stuffing

This stuffing is INCREDIBLE! I didn't stuff my turkey, I just did this in the oven. I cooked for 20 people, doubled the recipe (ish), and used sour dough bread. Even though I made what I felt like was way too much, every bite was eaten that day! The rosemary is absolutely essential.
