Rubbed and Grilled Pork Loin

My family is not the biggest pork fan, but I had the pork loin defrosted and thought I'd try it. We all loved it (kids and mother-in-law included)! Was super juicy and flavorful...and easy to make! I left out the coriander b/c I didn't have it and added a little more cumin.

Special Buttercream Frosting

I really like this buttercream, though it isn't as sweet as I thought it would be. It made a lot and I actually stored the remainder of it in my refrigerator for over a month and was still as good as the day I made it.

Plum Blueberry Upside Down Cake

This recipe took a bit of time to make, but I brought it to my parents for dinner and my 7-year old nephew said "yum, yum, yum". I thought it was okay, I would make more of the butter and sugar topping next time and beat the batter less.

Lamb and Bulgur Soup (Shorba Freek)

My husband, guest and I loved it. I changed some things, though. I used boneless lamb cubes, added only 6 cups of water, used a whole 26 oz can of tomatoes, which I chopped in the can and added with the juice when I added the water. I also used only 1/2 tsp ground cinnamon. I added one whole can of beans, 1 1/2 onions, 3/4 cups bulgur and 4 beef bouillon cubes. I did not add the mint. It turned out to be more stew-like, but it was great after the changes.

Tangy Slow Cooker Pork Roast

My husband never raves about my cooking, but guess what, when I made this, he did. He loved it and he always tells me that he doesn't like pork. Even my 2 1/2 year old ate it without me having to "make" him. Will definitely add this to my recipe box at home.

Chocolate Eclair Dessert

It really does taste like a chocolate eclair! The choc. eclair fans loved it. Actually, everyone liked it...it is very easy and a really basic good tasting recipe.

Roasted Brussels Sprouts

Mexican Baked Fish

We are a family of fish eaters, but we didn't like this dish. It was very bland and the kids only wanted to eat the fritos and cheese off the top. I would not make this again.
