Slow Cooker Beef Stew I

I loved it, and so did my family! It was very simple to prepare and very tasty and filling. I substituted the onions for turnips...I love onions but my family are not fans. The biggest compliment I got for this dish was how tender the meat was!

Asparagus Side Dish

I really enjoyed this. My 2 year old son LOVES asparagus and tomatoes so this is a perect side dish! The second time I made it I cut the steaming time in half because we all prefer our asparagus crisp.

Garlic Chicken

I loved it...very crispy. BUT I am a garlic fanatic so I tripled the amount as well as added garlic salt to the bread crumbs. No one wanted to kiss me that night lol.

Broccoli Cheese Bake

I served this last night and everyone liked it. I cut the recipe in half (something I do when I'm trying something new) and got in trouble when there were no seconds! This will make it into my regular rotation!

BBQ Pork for Sandwiches

This was DELICIOUS!! My whole family loved it! And it was incredibly easy. I couldn't get pork ribs at the grocery store so I used a pork roast instead. Instead of cooking on high for 4 hours, I set it to low all day because I wasn't going to be home until supper and it turned out great! I will certainly be making this frequently!

Famous Butter Chicken

Wow this is now my favorite chicken dish!! I didn't have the crackers that the recipe called for so I used multi-grain Vegetable Thins and it turned out amazing! One warning: do not make this while you're starving...the aroma coming from the oven is enough to drive you mad!

Buttermilk Baked Chicken

I always love recipes that call for over-night marinading and this one is no different. I made it with both the lemon juice and the vinegar and I preferred the lemon juice. It gave it an interesting zip! This is going to make it's way into my weekly rotation.

I (and my family) loved this chicken!! It was so tender and really simple to make. The best part about it? I had all the ingerdients on hand. The worst part about it? I didn't make enough for seconds LOL

Breakfast Pies

My husband works 6 days straight and has to get up at an ungodly hour so I make him these so he can just throw them in the microwave and go. They're just as quick as a bowl of cereal and keep him filled up longer!

Shrimp Scampi V

On a whim I threw in some sun-dried tomatoes that I had left over from the bruschetta I had made. If you like sun-dried tomatoes as much as I do I reccommend adding it.

Grilled Garlic Parmesan Zucchini

It's -30 right now so obviously I won't be doing any grilling. I was able to broil this in the oven with no problems. It was delicious, even my fussy eaters devoured it!

Slow Cooker Cranberry Roast

WOW...I've finally found my roast recipe!! I've literally tried dozens and this one was the best by far, so good that I'm just gonna stop looking now. The whole family loved it. At first I was a little skeptical with the cranberry sauce but it's amazing. Gotta love a recipe that is soooo good yet only has a few ingredients!!! I'll be making this one every Sunday!

Spring Risotto

I have made a lot of risottos before. I had intended on making a different one tonight but was missing an ingredient so I was glad when I found this one because I had almost everything on hand. I used red and yellow peppers just to give it more color. One thing I noticed is that the recipe doesn't tell you to heat the broth before adding it, although every other risotto recipe I've used calls for this step. Also, Arborio rice is better but it's expensive and sometimes hard to find. I find you can get away with using any kind of white rice. I even used Basmati rice tonight because that's all I had and it turns out just as good! I served it with lemon baked salmon and it was a big hit!

Braised Balsamic Chicken

Everyone really liked this dish and complimented on how moist the chicken was. However, after trying it once the second time around I made a few adjustments. I found the rosemary totally overpowerd the other herbs (and I'm not really a huge fan of it) so I cut it in half. I put the oinions in raw because I don't like them too overcooked. And lastly, I added more balsamic (because I love it) and doubled the tomatoes so there was extra sauce which I used on rice. All in all, a very easy and yummy chicken dish!
