Applesauce Oatie Cookies

Made the cookies first time exactly as written and they were delicious. 2nd time, I had about 3/4 of a cup of left over pumpkin puree and replaced the applesause with the pumpkin. My grand daughter is on a bit of a butterscotch kick, so I used butterscotch chips with the pumpkin and they were really nice cookies. I did find the cookies needed more like 12-14 mins to bake fully.

Quick Yeast Rolls

I have made these rolls countless times and find them so versatile. They are fabulous exactly as written. The flour amount is perfect for the light rolls they produce. After making a number of times as written, I have tried with both shortening and unsalted butter. I prefer the rolls made with 2 tbsp unsalted butter instead of shortening. I use these buns as dinner rolls, buns for sandwiches, tuna melts, hamburger as well as hot dog buns. Great with soup and chili.They are delicious and fast to make. I mix up in the morning, let rise an hour or so, drop dough on a parchment lined sheet, let rise an other hour or so and they are ready for lunch or to bake for use later in the day. I sprinkle a little poppy seed and coarse salt on each bun while they do the second rise. A nice touch. When I make for lamb burgers I sprinkle the tops with coarse salt and a bit of dried mint..for chili a little shredded cheese, ....Enjoy

Lemony Chicken with Artichoke Hearts

I have to do 5 stars. My husband wanted this twice the week I first made it. I am now making it a 3rd time in 2 weeks. Not our usual pattern. The second time I made the recipe I used chicken fillets, for little pieces of chicken in the pasta, but much preferred the whole chicken breast. We didn't find it to be too strong a lemon taste. We love lemons. It is called lemony chicken and that is what delivers.

Sac Valley Grilled Pork Tenderloin

This was delicious! We had more blackberries in our garden than usual and looking to try new ways to use the berries. The pork was tender and moist and the blackberry reduction was perfect with the pork. I would reduce the amount of sage when I make again. I found it a bit overpowering. I also strained the reduction sauce before serving. Our blackberries are fairly seedy. Served with a selection of zucchini and yellow squash, green beans, carrots and sliced baby potatoes roasted in the oven with a bit of olive oil and pepper and it produced a company quality meal.

Health Nut Blueberry Muffins

My 6 year old grand daughter wanted to make breakfast for her blueberry loving, health conscious Mom for Mother's Day. I made them exactly as written and they were fabulous! Moist, flavourful with great texture. We love muffins and fruit together so I made a batch the next day for our breakfast with the addition of 1/2 tsp each of cinnamon and nutmeg. Either way I have to say they are up there in the top 3 muffin recipes I have tried.

Shrimp Lemon Pepper Linguini

As usual I prepared the recipe exactly as written and it was a perfect quick dinner. I served with a crisp green salad and crusty bread. Smaller portions would lend itself well to a company lunch.

Tomato Spinach and Basil Soup

Excellent, healthy and satisfying soup. Easy to make and great with J.P's Big Daddy Biscuits! I made exactly as written. Only difference was I let the soup simmer about 20 minutes.

Chicken Papadoris

This dish was just delicious. Superb! I made the dish exactly as written. I believe in order to truly rate and review a recipe you can't make your own substitutions. Go ahead and substitute, make changes, but don't review the recipe. I was intrigued by the description by some reviews of being bland. The ingredients dis not read as bland This recipe was not bland! The flavors are subtle and compliment each other, there is a big difference between bland and subtle. We found the meal to be just pure taste satisfaction. I look forward to preparing again...soon!

Zippy Summer Shrimp

SunRun 90 - shrimp, especially the larger ones are usually sold deveined with the tail shell on. When rinsing under cold water before use they pull off easily. This recipe suggests cooking with the tail shell on. Check the photo and you see the shell on the tail. They again easily pull away for eating. Delicious, fast recipe very similiar to other posted grilled, marinated shrimp recipes minus tomato sauce

Sherry Sour Cream Chicken

I usually only review when I don't make alterations to the recipe, but.....this is a keeper of a recipe. I was really wanting the taste of tarragon, so substituted the fresh rosemary and thyme with fresh tarragon. I sauted sliced mushrooms after browning the chicken, topped the chicken with the mushroom and sauce, baked 40 minutes and it won rave comments a dinner. Simple, tasty and perfect with egg noodles

J.P.'s Big Daddy Biscuits

I made these to serve with a homemade Minestrone soup. I have always used my Grandmother's tea bisuit recipe (wonderful fluffy and a family tradition), but thought I'd try these. I probably will never make my Grandmother's bisuits again - these were fantastic. Huge, light and fluffy. My husband liked them so well, he asked me to make for breakfast the next day. Comment on one review. They do need to be kneaded! Please do not skip this part. It only takes moments and make a difference and make sure you do use your pastry cutter to make the mixture a fine "crumble" before adding milk.

Cranberry Orange Cookies

These were fabulous!! I used frozen whole cranberries. (I did not dice the cranberries or thaw.) The cookies were wonderful bursts of cranberries. Orange and cranberry are a wonderful pairing always. My 5 year old grandaughter loved them, so at least in our home were a childf favourite!!

Lemon Bars I

I like to try the recipe as written first, before I judge. I kept thinking this is not enough bottom layer...this is just not enough lemon filling...but resisted making adjustments before trying. I did remove bottom layer after 15 min. and cooked until browned (about 20 mins). It did produce a "thin" bar, but it was just perfect. I wanted light, lemon taste finish after a large Greek meal. It was a satisfying finish! A better choice than the Greek Lemon Cake I had originally planned. This I will make over and over, just the way it is written. I was impressed how easily they did come out of the pan.

Pan Seared Red Snapper

Just prepared this for the second time. I omitted the honey because of the side I served with it and it was as delicious as the first time. I served with with a mango couscous recipe I love ( has raisins, cliantro, parsley and lime among it's ingredients). It was a perfect compliment. This is one recipe that didn't have me wanting to substitute or change up. It is simple, fast, healthy and company worthy!!

Curried Beef with Winter Vegetables

This was a delicious curry and excellent way to use up left over root vegetables. I added a can of coconut milk to the recipe. It had a bit more spice than I like, but my husband found it just right. It was perfect for a cold winter night meal.

The Best Double Chocolate Chip Cookie

Absolute perfection. I did half the recipe. I used margerine and added a few spoonfuls of pecans and the cookies did not have crisp edges and were not flat. I did bake on parchment paper as I usually do. They were round, attractive and delicious cookies. This recipe is a keeper and great it is so easy...they disappear quickly.

Turkey Pot Pie II

Tasty, but because it needed some changes I can't rate it higher. I can not bring myself to use frozen vegetables, so diced celery, carrots, onion, beans, broccoli, turnip...whatever I had on hand, sauted til soft. I found the pies a bit dry, not as much "gravy" as we like. The meat and vegetables and crust were dry. I will make again, but think I will double the soup and milk and give that a try. I thought my 5 year old grandaughter would like her own "pie", but was put off by the vegs and meat sticking to the crust and would not eat. She is not a picky eater

Chiles Rellenos Pie

My husband is a huge Chiles Rellenos fan. I was hesitant to try since it was such a departure from the traditional. I was planning to freeze for his use. I am glad I tried the recipe. He LOVED it! The only change I made was I added the salsa into milk/sour cream mixture (because I was freezing for future use). It was absolutely delicious and I will make again and again and will add the salsa into mixture. It froze very well. I found it made 6 average servings.

Fresh Spinach Salad

My husband liked it, but I did not. The dressing amounted to a catalina type dressing. I found it too overpowering for the spinach and egg. A more subtle dijon vinaigrette, or simple red wine vinaigrette brings out the flavors of the spinach, egg and bacon as it should. This dressing in this recipe is all I tasted. I made the dressing exactly as the recipe was written. It also made a lot of dressing, far more than necessary for the amount of spinach. I'll use it up in a hearty chef's salad with cold deli chicken.

Kalamata Pork Tenderloin with Rosemary

We love kalamata olives and I was looking forward all day to our meal. I marinated the meat for 2-4 hrs. as several reviews mentioned. I doubled the sauce...but it was just okay for us. It wouldn't be something I would serve to guests. The meat while moist, just didn't have the flavor I was hoping for. Will make again and maybe add lemon juice along with the zest. Also will make with Greek Potatoes as a side and hope the potatoes add some needed flavour. ( did add additional kalamata)
