Blueberry Streusel Muffins

Very good muffin recipe. The only change I made was adding some chopped strawberries making them Blueberry/Strawberry muffins. Very Good ! They were done at exactly 25 minutes.

Easy Chicken Taquitos

The filling was good however, We thought the corn tortillas were a little too dry & tough following this recipe like it is, next time I make these I will either fry the corn tortilla first, or the whole taquito since that's always good. I will also try them with flour tortillas, I think flour will not be as tough after baking.

Banana Coffee Cake with Pecans

This cake is to die for ! It's a mix of banana bread & coffee cake. WOW! So moist, I can't stop eating it... I followed the recipe almost exactly, the only difference in mine was I used regular sugar and regular flour~I like the Wheat Montana flour so much better than the popular brands. I used a bunt pan. I sprayed the pan and put the pecan mixture in then the cake batter on top and cooked it for 45min. I think it could have finished baking in about 40min. Thanks for an awesome recipe.

Great cookies ! They are firm & stand up very well. Be careful not to over cook them, they will continue to brown a little even after they are removed from the oven...

Southwestern Chicken and Rice Casserole

DO NOT put uncooked rice in this dish & expect it to be soft in 45 minutes ! Use either instant rice, or cooked rice!! It took 20 extra minutes to soften the rice and by that time the chicken was overcooked. I gave this recipe 4 Stars only because the ingredients are correct, it just needs some tweaks. I added a cup of black beans & some garlic and it was a very good mesh of flavors .

A Baker's Secret for Bread Machines

I followed the recipe but found the bread very bland. The bread did not rise as high as many of the others I've made, but it is very simple & quick to make. I think I will use what's left for toasted bread crumbs, it should be fine for that.

Sausage and Broccoli Skillet

This was very quick and easy and the family loved it. The only change i made was to use fresh brocccoli that I steamed for a few minutes over the boiling pasta. And I used Cream of Mushroom soup because that's what I had on hand.

Pleasing Cheese Potatoes

Very good recipe and very filling. I didn't have cream of potato, so I used 1 cream of celery and 1 cream of mushroom and added 1tsp of salt and 1/2 tsp of pepper I also topped the dish with french fried onions before baking for a little crunch and baked it for 1 hour and 10 min at 350.

Curried Coconut Chicken

This is a great dish, we enjoyed it very much. I made some small changes, I use a whole chicken cleavered into chunks, the whole chicken has a much better flavor than plain breasts. Also, adding carrots, potatoes adds another flavor dimension and a tsp of Garam Masala spice is a must! Served it over rice.

Johnny's Biscuits

My Iron skillet must be bigger than most because when I was done putting the biscuits in the pan I was about 2 biscuits short? They rose well but never covered the gaps entirely (No problem) These biscuits turned out light and flakey with nice brown buttery top, definately my new go-to biscuit recipe...

Shrimp, Sausage, and Fish Jambalaya

Very Good... This was very simple and so tastey. I made it just as the recipe states, except I used long grain rice. NOTE: Be careful after adding the rice and waiting 30-45 minutes, mine started to stick to the bottom. A Dutch-oven might be a better method of cooking if you don't have a very thick bottom pot. I added some heat to it just before eating and it was even better (My own preference) my wife and daughter don't like the hot spices!

Lasagna Alfredo Roll Ups

These turned out very well- I made some changes- First-- 30 minutes at 375 is barely enough time to make the dish warm! I cooked it 45 Min and it still wasn't enough, I had 3 extra rolls in the dish which might have made a small difference but not that much. I will cook them a minimum of 50 minutes next time. I Used quality tomato based pasta sauce, it turned out great and was a little healthier. I added some Italian sausage to the mix and decreased the amount of Ricotta cheese by about a half cup. Next time I will add some fresh chopped mushrooms and chopped olives for even more flavor... It's a great dish that can be altered to your liking for sure..

Blueberry Buckle

First let me say this is Wonderful ! We love it ! Simple and soo delicious! Next; You do not "Pour" the batter into the pan ! You fold itis about the best way I can say it! It's very thick!! And that's ok, just be aware... Changes, I added a tsp of vanilla and split the topping, half white and half brown sugar. It turned out GREAT.

Pork Tenderloin Marinade

I was pleasantly surprised when I tried this last weekend. This recipe is so simple and yet it taste sooo good! After mixing the ingredients together in a large freezer bag, I added Pork loin and placed it back into the fridge for about 48hours. The meat absorbed the marinade well, the longer the marinade time the better.

Butternut Squash Soup

This soup is very good ! I roasted the squash for about 45 minutes at 350 and then chopped it and saute'd it in the skillett before blending it with the cream cheese. I also used about half the cream cheese as called for. Note: When decreasing the cream cheese you will need to decrease the water some and then add as needed while cooking the soup. If the soup is too runny, just cook until it thickens to desired consistency.

Chicken Stew with Dumplings

We really enjoyed this stew, it was thick and hearty with very good flavors that blended well together. The only change I made was adding an extra cup of water, near the end of completion, the stew became a little too thick, probably do to all of the starch. Next pot- I will omit the potatoes (I love potatoes) in almost everything, however, I think they are a little too much with all the great dumplings and the chicken taking the lead...

Teena's Overnight Southern Buttermilk Biscuits

I found these biscuits to be very light fluffy and tastey, the Buttermilk and a nice touch. My problem is with the cooking temperature- They did not have time to brown on top before the bottoms were over-cooked. I will lower the temp to 415* next time to see if that helps. I also will try brushing the tops with butter on a few to see if that helps them brown faster. Great biscuits !
