Nana's Beef Stroganoff

Excellent flavor. I used beef stew meat, as I had it on hand and canned mushrooms (again, had them on hand). I only simmered for an hour, as I cooked the meat through during browning. I kept tasting it through the entire cooking process and by the time the meal actually came together I was full! I will be making this again. Very good.

Soft Breadsticks

Delicious & quick! I followed the recipe exactly on ingredients/measurements. I read a few reviews regarding that the dough would be sticky (since it's a quick bread), mine was sticky too, until I rolled it in the butter. Shape the breadstick once you roll it in the butter. I baked the breadsticks at 425 degrees (based on a few reviews) for 12 minutes. Perfect, light and very good flavor! Next time I'll double the recipe.

Golden Potato Soup

Base of the soup is key. I used this as the base, then built on it. 1) Fry up some bacon, retaining the grease. 2) Mix the flour into the grease and make a roux. 3) Add 1/2 cup half and half (or milk) and mix until smooth. Add to stock pot with other ingredients (except for cheese & bacon) and only 1 cup of milk. 4) Simmer on low until potatoes are soft. Mix in cheese and bacon, simmer until cheese melts. YUM!

Buttery Corn Bread

I followed the recipe as it was, as with baking things can be a bit funny. This bread had amazing flavor and was moist. Didn't last a week in our house! One complaint and the only reason it's not 5 stars is it was too crumbly. I like my bread to be a bit firm and have more spring in it. Might be the altitude we are at (6500 ft). Next time I will use less flour and more corn meal...cutting back on the flour cuts back on the crumbles. Also, mixing the flour in more will help release the gluten which will bond everything together.

Unbelievable Fish Batter

First time I made fried fish - this batter is excellent. I went with the other reviews and only used 2T of baking powder, which eliminated the after taste. Make sure to seasoning the batter to your menu or taste. I used garlic powder, onion powder, salt, and pepper. Next time I think I'll add some beer in place of the water. Did also need to add more water, as the batter was too thick with the amounts they recommend. Overall it was light and perfect! Will make this again. My Southern husband is pretty impressed with his Yankee wife's fish frying abilities now!

Zucchini Bread IV

A great way to hide veggies from the kids! I followed the recipe almost exactly; except I did not have enough white sugar, so mixed a cup of brown with it - tasted fine. Easy to make, great flavor. My two year old who dislikes all veggies has asked for more "uhh-cini" bread. She's sold and so are we! I'll make this for a great summer treat. I think this would also be amazing with the sugar/nut topping that some other people suggested; I did not try it, but I think it would be great.

Italian Spaghetti Sauce with Meatballs

Delish! Of course, I made a couple of a tweaks to make this even more healthy! First, I did not add the olive oil - added 1/4 c of water instead and used the juice from the canned tomatoes. I also used a dropper full of concentrated liquid Stevia instead of the sugar. This was crazy easy, no preservatives and everyone how has tasted this (brought it to the office) was amazed at how good it was! I'll be doing it again here this week!

Fabulous Beef Tenderloin

Low Fat Eggplant Bake

It look good - smelled good; but we did not care for this. We only ate a few bites. Sad, such fresh ingredients. There are times when lowfat ricotta should not be used. This is one of them. I supposed with some major tweaks it would be a good recipe, but this is one of those lean meals that does not make the grade.

Gourmet Chicken Pizza

Great homemade pizza! I used a Boboli crust (just to cut time), and canned tomatoes with basil. When cooking the chicken, season it during the cooking process, used Italian seasoning, garlic powder, S&P. Will make again. I enjoyed and so did my 2yr old.

Venison Tips and Rice

I would have rated this only as a 1 star if it were only me eating it, but my hubby and 2yr old ate it up. I needed to use up the deer that has been in our freezer for awhile and I liked the idea of the fresh veggies. It really didn't suite my taste buds at all. I do not care for venison and tried this because several people commented about how they don't like venison but enjoyed this dish. I can't say I'm among that group. Not a fan - won't be making this again.

Quick Stove-top Curry Chicken Divan

Excellent. I modified this recipe to make it stove-top (due to lack of time) omitted the cheese and added curry powder. FABULOUS! Boil the chicken in a bit of curry water, when the chicken is just about done, add the broccoli and cook till tender. Take out the chicken, drain the broccoli. In the same skillet add the soups, and mayo, stir well and heat thoroughly. Then add the shredded chicken and broccoli. Next add the curry powder to taste - serve over rice. HUBBY LOVED IT!
