I had been planning to cook this for a few days now and was really excited to impress my family. I was nervous because we've been eating enchiladas at the same mexican restaurant for over 20 years and I knew this was going to be different, but hoped it would be as good. I had read reviews about it being the tortillas getting soggy, so I mixed the chicken with all of the soup mixture early in the day, then just folded the tortillas and put them in the baking dish right before we wanted to eat, and topped that with enchilada sauce. My family LOVED it!! I should have put a little of the enchilada sauce or something down first, the bottoms were a little dry was the only advice I got from my testers. Otherwise awesome!! Everyone agreed it was a "repeat"!! Thanks for the recipe!!
