Mini Mexican Quiches

Great recipe! Made a lot of different ways to see which I liked best. The change I made to the dough was just to add 1/4 c parm b/c I had that on hand. Dough came out perfect in both batches that I made. These are the ways I made them (all with the mont jack): 1. hot turkey sausage sauteed with red bell peppers and scallions 2. Green chilis and red pepper flakes 3. Mild Salsa 4. Red bell pepper (not sauteed this time), scallions, and green chilis 5. Black beans and mild salsa 6. Black beans, red bell, scallions, and green chilis 7. Green chilis (recipe as stated) So, I really honestly liked all combos but my husband and I both thought the turkey sausage took away from the other flavors so that the meat was all we could taste. I think the recipe as it stands is pretty tasty. The red pepper flakes added to it just give it a zip if you like things a little hotter. The salsa was very easy to add and might be nice if you made half with green chilis and half with salsa if you wanted a Christmas themed appetizer. The black beans were ok but didn't add a ton of taste. My favorite was probably number 4, which is the red bell pepper, scallions, and green chilis. Thought this was a great combo of prettiness and taste. Does take a little more time to chop the veggies. Thanks for a great recipe!

Mexican Rice II

Good rice that I'd make again. I substituted the seasoning for Taco Seasoning I on this site and it came out better that way than the original seasoning blend. Subtle difference but enough to take the rice from ok and good.

Apple Carrot Muffins

WONDERFUL muffins. They were so moist and the whole family loved them. I made them in mini muffin tins which are an easy snack for the kids. I baked them for about 14 minutes. I divided the flour into white and white whole wheat. I also split the sugar into white and brown. I'll definitely make these again--taste great and are healthy!

Spinach and Potato Frittata

I thought this was pretty tasty and I would make again. I used other reviewer's suggestions and jazzed up the potatoes a little by adding 1 Tbsp olive oil to them in a bowl and mixing with a little garlic powder, salt, pepper, dried basil, and dried oregano. I also had other veggies on hand, like grape tomatoes and a few mushrooms so I threw those into the frittata. Next time I'll add even more mushrooms b/c I love them with spinach. I had frozen spinach on hand so I used the whole box of that. I also added nutmeg to the spinach and some basil to the eggs. I used 3 whole eggs and 6 egg whites (calorie cutter). I cooked it on the stovetop and then transferred to the oven at 350 for about 6 minutes and then set it to broil at the very end. Had it for dinner and little kids and husband all liked it. It also reheated nicely for breakfast.

Pizza Dough II

Worked great for my recipe. Baked at 500 and warmed pizza stone ahead of time like one reviewer suggested. Used dough in calzones and worked perfectly. Will use again!

Roasted Garlic Cauliflower

Really nice and simple side dish. I didn't have parsely on hand so we went without and it was still very tasty. Kids and hubby agree that its a keeper.

Mexican Cream Cheese Rollups

Avocado Stuffed Yams

I'm giving this five stars because they were easy, the flavors melded together well, and they are very healthy. I used slightly less oil and next time might try even less. Olive oil is healthy so I don't shy away when it's needed, but in this case I don't think you really need as much as the recipe calls for. Definitely will make these again.

Cornbread Muffins I

After trying three different corn muffin recipes I finally found one I like. These are a keeper. I used a can of corn based on other reviewers suggestions. I also used slighty less honey (basically b/c I ran out).

Unfortunately I didn't really like these and woudn't make again. I just didn't think the combo was anything to rave about so I'll be hunting for a better corn muffin recipe.

Black Bean and Corn Salad I

I thought this salad was great! I took reviewers suggestions and made some changes. Wasn't sure which suggestions I'd like so I hedged my bets, split the recipe in half and did different things for both halves. In both salads I used corn off the cob that I had frozen over the summer, just thawed it out. Also used fresh cilantro for both. In one half I used a white onion and green onions and in the other half I used only a red onion. I keep tasting both and can't tell a true difference between them. The one with the green onions looks a little prettier though with the extra color. Next time I might just use only the green onion and nix the white and reds. I also used another reviewers suggestion of putting it on a corn chip and then I put a dollop of sour cream on top. When I mixed the sc into the salad it took away from the color of it so the dollop on top looked best. The longer it's marinated the better the flavors. Will definitely make this again!

Southwestern Egg Rolls

These were terrific and I'll be making them for my upcoming fiesta wedding shower that I'm throwing. After reading reviews I decided to bake instead of fry. I added a coat of egg white wash over tops so they'd be crispy. Next time I might just go with cooking spray. I used rotisserie chicken to save time. I also tried both wonton wrappers and tortillas. I liked the taste of both, but the wontons gave it added "crunch" and I think they looked a little nicer.

Amy's Cilantro Cream Sauce

Great dip and very easy to make. I wasn't sure how much cilantro to add so I just grabbed a handful. I'll probably use the entire bunch next time. You can make it a day or two ahead of time if you are serving for a party. I paired with Southwestern egg rolls as others had suggested and it was a great combo.

Black Bean Pinwheels

These were pretty quick and easy to make. I took other reviwers ideas and added a can of green chilis. I made enough for the following day to see if they held up well overnight and they did. You could make these ahead of time for a party. I think if I make again I will add diced red bell pepper to add texture and color.

Lime Cilantro Rice

Not bad if you want to make quick additions to jazz up plain rice. My husband and I thought the lime was a little overpowering and I wasn't altogether "enthused" about the taste. Probably won't make again.

Mexican Rice III

My husband raved about this rice! I really liked it and would make it again. It took a little bit of time b/c there are quite a few ingrediants to chop--so it's not a dish you'd make when you are in a hurry. However, if you have a little extra time it's worth the effort!
